I do hope you listened to the audio program. I am a fan of the show as they always have interesting topics. I agree with your comments about "celebrity chefs" . I doubt even one has caught a fish, let alone cleaned it and filleted it. Actually the only "celebrity chef" I respect is Anthony Bourdain as he had enough sense to get out of the kitchen and become a full time celebrity.

I have often wondered how many of the "chefs" on food network could clean a fish. I would imagine many of them can barely filet one.
