So Hkrall, you write the cool hot dog blog for serious eats? I love that column. And thanks for the mention. My buddy in Alaska, M.A. got me started in the hot dog biz. I spent a couple of days working his cart there. Any time I get a little cocky about being a cool hot dog guy I talk with him. He rocks it big time, and would make an interesting choice for your street food column. Thanks again for the mention.

Looks great and people seem to be super passionate about the stand, especially chefs, who seem to hold in Jim's in high regard as the ultimate non-trendy gourmet hot dog / sausage stand.. hope to get there myself one day!

Our best friends and next door neighbors along with my wife and I were in Denver during the DNC, we encountered Biker Jim's while strolling down the great 16th Street Pedestrian Mall in Downtown, we tried 4 different dogs, all good. A few months ago I had to return to Denver and tried them again, still tasty. I have a friend who works at a jazz station in Denver and he was the one that told us about it because they advertise his stand

Great article. I wish you would start up a franchise in my town. Those speed-caramelized onions sound good. Can you elaborate a little on your method? Must use butter or something besides coke, right?

Regarding sauteing sounding weird I live in Wisconsin (Packers/Brett Farve), and took a trip south a couple of years ago. One obligatory stop was Kiln MS, Farve's hometown. We found a walk-up drive-in and ordered some burgers and ate at a picnic table under a tree. The owner took a break and sat at the next table. The burgers were excellent, and we told him so, and I mentioned what a nice surprise it was to find both raw and fried onions. First he looked confused, then he said "Fried? Oh, you mean sauteed." And I remembered that fried is a whole different thing down there.

I actually like to refer to the onions as "Speed Caramelized" Sauteing just sounds weird to me. As for the guy in Seattle, no I don't really know who he is. He was exceptionally nice to me though. And yeah, burning dogs in 95+ heat can be a task. I'm just lucky people will endure the heat long enough to get a dog or two. Of course now that we're getting some 40 degree days I can think back longingly to the shorts and t-shirt weather. Oh wait, that was just last week as the temp was 78 Tuesday. And then of course the high was 35 Thursday. No figuring Colorado weather, beats Alaska though!
