Archie Moore's is a Small Chain.... They also bottle and sell their sauce. Fairfield is also not the original location. It's very possible that it is bottled elsewhere. (Or drummed, in this case!)

Since there's not a whole lot to wing sauce, my guess is that since they're buying by the drum, it is what it is.
