FAVORITE DISH WITH FRESH BAMBOO SHOOT SEASON (Born in OKC)

Little Szechuan on Buford Highway is our favorite Chinese place in Atlanta and proprieter Kong Ko currently has dishes made with fresh bamboo shoots as he does each year. We had a good dish with chicken and bamboo shoots last visit. One time in the past we had, on request, a vegetable dish with bamboo shoots, cabbage, mushrooms, etc. It had never occurred to me but Kong says that the bamboo shoots seen in open barrels in Chinese grocers are loaded with preservatives and are not to be used.

I hope others will name dishes they have enjoyed that incorporated fresh bamboo shoots and tell us where they ate then , and also name other Chinese dishes that are seasonal with fresh ingredients.
