It took me 2 days to get through it.

I just ordered my trailer - for the second time. First time the dealer took 4 weeks to never get the layout correct on a custom one. I don't know what is going on with those guys. I ended up ordering one that is mostly built down in GA and it will be in VA by the middle of next week. I am saving about $4000 by driving 650 miles each way but I will have it much earlier this way too. I got a 8.5' x 20' trailer and will turn it into a mobile fried foods (chicken, corn dogs, fries) and ice cream unit. I hope all goes well with my build but reading here has given me the jump on lots or questions I had. Thanks.
Re:Mobile kitchen build info (chocolategypsy)

"Steam table, refrigerated prep table, warming cabinet, register, small freezer, heat lamps, inner lights, dvd and monitor, water pump, vent/exhaust hood, grill and soda dispenser are what I am planning to run at this point."

I think you are at least 7kw, maybe more? That's a fairly big genset...be sure to add up all the watts of EVERYTHING including battery charging and maintaining, then ad at least 20% to that number. With out build, I'm doing everything propane (including on-demand propane water heater) and I'm still going to have at least a 10kw generator (propane again) to feed my electrical needs.
Even here in Alaska, we need AC in the summer, and just for the AC alone you need at least 3.5kw running juice, and 4.5 to 6kw startup to get the compressor going.

Back in the old days of desert racing, Dad built a neat generator frame which slid right into the trailer hitch on the back of the pickup. Can you do a hitch-mount thing similar on the back of your truck? Or is rear-mount not an option?
As for plumbing, we are doing everything just like we had on our 5th wheel travel trailer. 12v pump, under-chassis waste tank, RV-style waste valves and hookups. Water inlet is simply an RV-style screw connector with backflow valve.

If you are not sure of something, the RV way is the easiest to go - repair parts are EVERYWHERE, and you can see how to lay it out by visiting any RV dealership - or simply look in any RV trailer or motor coach.

As for backing behind the stainless in your hot area, it's not light, but fiber-reinforced cement board like plumbers use for shower stalls is prefect. Can't burn, takes lots of loading, and is waterproof...
Re:Mobile kitchen build info (CCinNJ)

 From soup to nuts!
Re:Mobile kitchen build info (TheIke)

Thanks WD and CB.....Am going to Lowe's today to see what they have. THANKS !

TheIke, You can go to any home improvement store and special order a window in what ever configuration you need.

THE WILD DOG

I can not. Main gas lines are in, hands are permanently stained black, For the most part they are in, I have to connect the T-fitting for the run from the tanks, but here are two pictures. Had to make a larger hole for the front run, Any suggestions on what to use to plug or insulate it ? My exhaust hood fan is so strong it changes the air in the trailer every 30 secs. So on occasion during the summer if the exhaust fan is running it will suck the fire out on the water heater, LOL.

But if you don't have a tornado like exhaust hood you'll be fine. I really do like this new tankless water heater and for the price if it only last a year I'd be happy. It took less than 10 minutes to take the old one out and put this one in.

DR OF BBQ - I am catching up on some old posts regarding tankless hot water heaters and saw the link you posted several months ago. The link is now dead....can you tell me the brand and model again of the tankless unit you are using ? Thanks....TheIke

Jack

PS I used stainless steel braided hose with standard garden hose fittings to run my water lines. However ya live ya learn LOL. I'm getting ready to drop in another stove so i can do more cooking. My graphics cost about $500 but I got signs too. Its not a wrap, Wraps were way more expensive at the time. I am going to price them though for my bread truck project.
Re:Mobile kitchen build info (Mamie)

 wow ...
