(improviser)</title><description>  Stopped in to a new Mexican restaurant, El Jimador, in Clemson this afternoon. Saw ceviche on the menu and decided to go for it. This ceviche was made with shrimp, tomatoes and onions, and lots of cilantro. I thought it was delicious, and I think it's going to be my go-to Mexican lunch on hot days like today. (mayor al)</title><description>  C and C&amp;nbsp; (Cerveza and Ceviche) was the standard 'Lunch' served aboard the day trip fishing boats out of Ensenada, BC when we went fishing. The crew used large&amp;nbsp; Sardines or Anchovies filets from the Live-Bait tanks&amp;nbsp;with onion pieces, all soaked for a few hours in Lime Juice. If we got lucky early enough in the day, we could slice up some Yellowtail or Dorado in place of the Bait-fish. &lt;br&gt;       &lt;br&gt;      We would bring along a box of Ritz Crackers to use in place of utensils. Any citrus juice or combination of juices can be used, along with some salt, to marinate -- actually to&amp;nbsp;virtually cook -- the fish. Some ceviches (it's also spelled seviche) include chiles, onions -- that sort of thing.
