Has anyone had any experience with uncured hot dogs? Taste? Shelf life?. TJ's claims the beef is 100% natural, no hormones, chemicals etc. i'm anxious to try them and will report back.

I love them for cooking at home.
Are you interested in cooking these for the public?
Also the Applegates sold at wholefoods are even better. Shelf life is pretty long. Not sure exact but it's over one month I think. Do not quote me.
I will warn you its not for every one. It is an acquired taste and don't think the majority of the public will eat them.

According to the mailer I received from Trader Joe's their franks are skinless. I thought it said they were organic, and I don't do organic.
