I'm wrong about the Tabasco, though it probably wouldn't hurt, instead, a few sprinkles of Tony's.

chewing - looks fantastic, and reminds me a lot of an appetizer we make called spinach bread - You defrost and squeeze all moisture from a package of frozen chopped spinach, add finely chopped onion, some type of soft cheese (used to use Kraft garlic cheese roll, but they don't make anymore, so now use Velveeta) to hold it together, add a few dashes of Lea and Perrins, and Tabasco.

Butter each side of a split poor boy loaf, spread the-spinach-cheese mixture, add grated Parmesan and mozzarella slices. Heat in the oven just long enough to get everything soft and warm, then finish in the broiler - Cut into 2-3" wedges and serve hot as an appetizer. In your case, you could add those other cheeses instead of the mozzarella. It's great, everyone loves it, as I am sure they do your sandwich.

Does the customer get the cheese scrapings from the grill as well or are they a reward for the cook?

Brad funny you ask, as I made the sandwich, and shared the fried cheese with the other cooks and Kati the photog., everyone loves fried cheese I believe, almost as much as bacon!

Great looking sandwich fat, I love that cheese scrapped off the grill.
