I also like chicagostyledog's version of marinating in peanut butter and soy sauce. Think I'll try that when it gets warm enough to grill again. Sounds like a Thai based recipe and I love Thai food. I wonder how that would work with a little red chile/coconut milk marinade?

Quite well. I've made up something similar before, marinated overnight, then slapped it on the grill. Just blend up all your ingredients. It seemed that the final flavor was much milder than I expected, but very tasty.

Try adding coconut milk and chili paste to your eggs the next time you make an omelette. Saute some chicken and vegetables, wrap that up and you get a Thai melete

RE: "Killer" chicken??? We use either Coke or Dr. Pepper (of course the non diet versions). The kids love it for it's simplicity. It's easy to prepare for, very easy to cook and even easier to clean up after. In fact universally the boys have taken to cooking this meal at home for their families by adapting it from a Dutch Oven to a Lasagna Pan and they come out looking good cooking a meal that they learned and one that everyone loves.

It does make the meat moist and it just falls right off of the bone and the coke and ketchup combo turns into a BBQ sauce that comes out tasting great.

RE: "Killer" chicken??? I picked up a recipe book (tall and narrow paperback, but I forget the name) which gives several variations on the basic recipe including substituting a can of coke or ginger ale for the beer. So many recipe's, so little time.

RE: "Killer" chicken??? (redtressed)

Aspartame is nasty, nasty stuff. Strong correlations are being made now between the rise in incidence of neuromuscular disorders such as multiple sclerosis, Myasthenia Gravis, Fibromylagia, and Lou Gehrig's Disease with the onset of use of aspartame. Try Google-ing Aspartame and note the studies AND the chemical make-up of Aspartame. Splenda, although I've never used it, does not have nearly the cautionary tales about it as aspartame did from the very beginning. Aspartame has been banned for any use in the Medical Center I worked at since the late 80's.(other than vending machines)

RE: "Killer" chicken???
