And, indeed, interesting. I think the best choice for those New Jersey Texas Weiner joints using the Grote &amp;amp; Weigel pork/beef would be a pork/beef Thumann's suitable for the grill. However, I suspect this dog is more expensive than the analogous G &amp;amp; W.&lt;/font&gt;&lt;/font&gt; &lt;br&gt;  &amp;nbsp; &lt;br&gt;  &lt;font face="courier new,courier"&gt;&lt;font size="3"&gt;&amp;nbsp;Insofar as Father &amp;amp; Son, Linden, N.J., well, they're the only frankfurter emporium in N.J. I know of using the all-beef natural casing Grote &amp;amp; Weigel, a very fine dog in the East Coast deli, all &amp;nbsp;beef tradition. I think their best choice would be a Best Provision (Newark), all beef, natural casing, eight to a pound, or the Hatfield all-beef n/c meant to compete in that segment. This was also mentioned on Hot Dog Nation's Facebook page. Grote &amp;amp; Weigel's standard griddle frank is used at practically all of the Plainfield area Texas Weiner joints that grill (rather than deep fry like the Paterson area joints) their dogs. Galloping Hill Inn in Union gets their franks from G&amp;amp;W but it is a different recipe frank that was from Gaiser's butcher shop. Galloping Hill Inn has the recipe so it will be interesting to see if they have someone else make it or switch to another dog. We will no longer be able to provide  the two foot hot dog. However, I have already tested 4 meat packers to find the  best possible dog for Doogie's and The Clam Digger, with hopes of retaining a 16  inch dog.
