It looks like I'm in the right direction, based on Jim and Kevin's suggestions. I am a little leery of using hickory the first time out, because it might be too strong. I'm going to go with my original instincts. Woods like Hickory and Mesquite produce a&amp;nbsp;harsher smoke than what I like.
