(chewingthefat)</title><description>  &lt;h1&gt;I have not seen this anywhere else, a wake up in the middle of the night, trying to get back to sleep idea! Smoke a pork butt, let it cool in a pan with sides, covered, overnight, Take the entire butt, pull the bone, chop it up in a processor, to a fine grind, adding some rendered fat from the overnight rest. Add additional rub to taste, add a bunch of East Carolina pepper vinegar sauce, let it marinate after mixing it in, say an hr., make a patty say 6-8 oz, fry till crisp on both sides, doesn't take long, mind you the pork is already smoked. Bun or straight up, Might want to add additional vinegar sauce or tomato based, but I ate it plain on a roll, Delicious!
