Like Prosciutto crisps! (CCinNJ)

Actually the watermelon ribs are from the Roadfood icon Loveless Cafe in Nashville.

http://www.lovelesscafe.c..ecipes/watermelon-ribs/

Luckily Jane & Michael Stern wrote the book on Loveless. The BBQ sauce is in the Roadfood recipe section.

The seasoned salt...

1 cup kosher salt
1/3 cup garlic salt
3 tablespoons celery salt
2 tablespoons dry mustard
1/2 tablespoon rubbed sage
1 teaspoon dried rosemary
1 1/2 tablespoons dried oregano
1 teaspoon dried thyme

Mix all the ingredients together and store in an air-tight container.

I will test it with a pork shoulder in the crockpot (in the spirit of staying cool and sane). Rub bag chill overnight. Into the crock...sauced at the final hour or so. A few adjustments may need to be done...with all the double-downs in the seasoned salt and rub.

Re:Foods to deal with the heat!!!! (roadkillgrill)

LOL... Mine is by name. I'm a short order cook. Everything is cooked by order. I have no warming pans. The menu changes by 80% about every 2-3 weeks. Whatever is in season. Some items may be par cooked. ie my bbq is GriddleQ, technique taken from an old black man who had a 8x8 cinder block building and had truckers lined up. Fresh Crawfish Etouffee, Fresh Shrimp (whatever you want it on), This week is coldcut PoBoys, because of the heat index. Next week it's Spare Rib Tacos w/ fresh Corn Pico. 20% dont know what they are getting until they open it...lol but fests are a whole diff story. I cracked the Doritos this weekend. Plus I send out to 1500 on Social Media & emails every Sunday night.
Re:Foods to deal with the heat!!!! Add the ribs and leave to marinade over night. Remove the ribs from the marinade and place with a roasting tin with a drizzle of olive oil and bake in a hot oven for 2 hours, the turn the heat down and cook for a further 30 minutes until the ribs are cooked through. Baste often with the marinade whilst cooking. These would be equally good on the BBQ.
Re:Foods to deal with the heat!!!!
