I'll be watching for you. I think I watched State Fair Foods but can't remember if I was paying close attention. Because zeppoles are so popular we don't see too many funnel cakes. They are on the Boardwalks down the shore. &lt;br&gt;  &lt;br&gt; I have another idea and if a thinned  consistency was a good transfer and held well I know it would be a hit! &lt;br&gt;  &lt;br&gt; Cannoli are also a very very popular item in the NYC area. Ricotta (or marscarpone) cheese drained mixed with powdered sugar is the base of the filling. Some add cinnamon...citron etc.  &lt;br&gt;  &lt;br&gt; Giorgio's decorates with sprinkles. It's often red &amp;amp; green citron (dried fruitcake fruit) or chocolate chips chopped or pulverized  pistachio dust. &lt;br&gt;  &lt;br&gt; I think a cannoli funnel cake would have them lining up.  I will see what I have that is like a funnel cake ring and give it a try. It might be a disaster but I will give it a try at home for some friends. Most of the shows I do, the media has started videoing all the new items. The Travel Channel videoed last year about the Red Velvet, for the show State Fair Foods, and they came again this year, for the show Food Paradise, using both the Red, and the German. Since Fried Tater does his funnel cakes with just powdered sugar on a paper plate, I would think plain chocolate with powdered sugar would work. Some of the concession suppliers will probably be offering the mixes pretty soon if they haven't already.  &lt;br&gt; Here's a recipe.
