Over direct heat in the winter. The Nathans I use can stand a little boiling water (off and on), just don't keep boiling the snot out of them for hours. Don't sweat the small stuff you will soon figure it out.

Hella your cart/concept with the taco's is pretty cool. Gonna have to call you some day. I've started dabbling in them some and wouldn't be surprised if at some time it overtakes the dogs. My daughter in law was raised in Mexico and I have a few Mexican guys to critique my tacos and give me advise about how I am doing and what to offer with them. They say there are quite a few of them around and they are sick of fast food joints so word of mouth can spread pretty fast. Your Sizzle-Q grill looks like hell (that's cool too). Sucker will clean up like new with some Mr. Muscle type pro strength oven cleaner. Couldn't believe how it cleaned mine.
djdawg

For those of you that boil your dogs... the pan that actually holds the dogs, do you have that over direct heat or in a double boiler?

Re:Stupid question thread (THE WILD DOG)

im pretty sure he's sicked the law on ppl for far more petty things than that

Re:Stupid question thread (Uncle Groucho)

I believe you are to simmer the dogs and never boil the dogs.
Re:Stupid question thread (BpCBlake)

THE WILD DOG

why was that post flagged ?

beats me. almost all my facts come from bens book.
hot dogs saved my life.
maybe I should start quoting word for word. but then ben prolly wont like that much.
Re:Stupid question thread (THE WILD DOG)

why was that post flagged ?
Re:Stupid question thread (BpCBlake)

boiling is over direct heat. pan in pan is steaming or holding depending on the setup.

Re:Stupid question thread (djdawg)

For those of you that boil your dogs... the pan that actually holds the dogs, do you have that over direct heat or in a double boiler?

Re:Stupid question thread (DadsDogs)

hella good tacos

I have one of these, it holds ice in the bottom and the little plastic cups slip right in.
I used to use it for lots of stuff now i just put my limes in it. In hot weather the ice melts fast so i built myself an insulated box that holds 6th pans.

Notice the aluminum box on the top of my cart; it has a red cutting board resting on it. I have a 6 compartment condiment tray, stainless steel with plastic inserts. Plexiglass cover on the top. No bottom. I have the following in it. Neon relish, chopped onions, sport peppers, jalapenos, tomato slices, and shredded cheese. I've only been out a few times yet and have sat this on the table. Do you guys ice this down? If so, HOW do you ice it down? Is there a bucket/bin contraption out there that it would nestle in?
