Food, I had to resize it to fit a normal screen. If you follow the link, the original is pretty high resolution, and very easy to read. What I like about it is that I could take this chart and, with no other recipe, make gumbo.

Also, it makes the distinction between Cajun and Creole directly with the tomatoes! Creole gumbo can have tomatoes, but Cajun gumbo does not.

You need a Masters Degree in Chartology in order to read the Dang Gum thang!
I'm sure no Cajun put that thang together!!!
The Cajun Chart consists of a picture of a big 'ol Pot with some roux in it and a paddle to stir in some tomatoes, broth and seafood and Trinity and maybe some duck, rabbit or squirrel. A small pot of rice on the side burner!

CajunKing, whom I miss.......sent me his award winning recipe.......I stick by it, but good post, Mosca.....I like everything in mine-sausage, chicken, shrimp. crab.......

Gumbo Z'herbes - meatless gumbo made during Lent, supposedly has to be made with an uneven number of greens (5, 7, etc.) I've never had it, somehow can't get excited about it, but will try it one of these days.

I like it. Interesting about the greens. Guess I have never eaten it during Lent where greens were added!
