Help with a few questions. (mheming2)

I am currently looking to start my own restaurant on the UWS of NYC. I have heard alot of issues with distributors and sales reps in relation with quality and also prices. I made a short survey that would just answer these few questions I have. I would really appreciate any responses and help given.
