I had the numbers but cant seem to locate them right now (I think tsp 143 lan.) but only need the I pad, wireless router, and Ethernet printer only Ethernet printer will work for this system, I was fortunate enough to have the company we are located at furnish us with a wi fi connection for the I pad too. The Fisher listed above will flow 350k.

No AC. I wired for it but I'm not sure it will do any good. I have 3000CFM going through the exhaust hood, that's like 4 changes a minute of air. AC will be little more than a little cold air blowing in your face. I may still add one for non-cooking times.

Generator is a 6000w Kipor that actually has died on me. Working on replacements now but will be a EU3000is Honda and a second one if I add AC. Three year commercial warranty is hard to beat.

Started Truck in November. Worked every Saturday and weeknights until I could not feel my feet any more :)

Menu is:
Chicken Sandwich
Fish Sandwich
Pork Sandwich
Grilled Mac and Cheese
Italian Melt (Grilled italian cheeses with veggies)
Potato Balls
Ribbon Fries
Apple Fries

There are a few more items but you get the idea. Not all items available at every service. 3 or 4 mains and three sides.

If venue will be low volume we go with the grilled sandwiches, mob style events will be faster steam table sandwiches like the chicken and pork.
Re:Food Truck Build 1979 P60 (Bistro a go-go)

 cpl quick questions:
1 propane tank or two? what was the layout of the tank to equipment piping sizes? where did you get and how much for propane regulators? what do u ask for when buying them? did u put a/c? how many btus on all equipment? what size generator? whats ur menu? can u post it? truck looks good. how long start to finish? cheers mates
Re:Food Truck Build 1979 P60 (BelCibo)

Dgaviolac

How did you mount the griddle to the work table?

I used Speedrail bases to mount all the tables and freezer to the floor then the two burner and the grill to the table. They are too expensive from grainer but here's a picture of them:

http://www.grainger.com/Grainger/HOLLAENDER-Structural-Fitting-4UJ14
Re:Food Truck Build 1979 P60 (Dgaviolac)

How did you mount the griddle to the work table?

Re:Food Truck Build 1979 P60 (BelCibo)

 Finally some pictures:

Re:Food Truck Build 1979 P60 (BelCibo)

Finished the second Farmer's Market now. Sales were up slightly. Around 1/2 our customers last time were friends, this time only four or five. Lots of return customers from last week raving about the food. Turns times were much better and the line never got more than two people deep even with higher volume.

An observation though, lines are GOOD. When there is a line it sucks people right in, no line you can see their reluctance to walk up. Gonna have to pay a couple people to make a line lol.

At first we were not going to setup tables but now it is a must. When someone is eating at the tables you can watch new customers peering over their shoulders to see the food. I even heard a couple conversations were they recommended the food to those looking.

An interesting menu moment....We raised the price on our Blackened Fish sandwich one dollar making the highest price item. Volume on it doubled from last week and it sold out. Strange aye?
Re:Food Truck Build 1979 P60 (BelCibo)

daddywoofdawg

doesn't your Ipad have 3/4G?
Ya I need to light the menu and marqee so maybe those aren't the answer.

Our Ipad is not connected to our cell plan. You somehow have to get your internet service to an ethernet port so the printer can get on your network. That's where the router comes in, running in bridge mode I believe.
Re:Food Truck Build 1979 P60 (daddywoofdawg)

 doesn't your Ipad have 3/4G?
Ya I need to light the menu and marqee so maybe those aren't the answer.
Re:Food Truck Build 1979 P60 (BelCibo)

Another piece of advice based on our build. We are a full service unit with no commisary. We boiled some noodles, ran around 2 gallons of coffee, washed hands and dishes. At the end of the day we ran out of water before cleaning all our steam pans. Filling three sinks takes a ton of water. We went with a 20 gallon fresh water tank, hindsight it should have been 30+.
Re:Food Truck Build 1979 P60 (BelCibo)

daddywoofdawg

Belcibo: did you ever get nite photos of your outside lighting?I'm thinking hard about getting some.

Still have not got a night shot for you. With it pitch black they are ok, particularly on the lighter colors. If you were in a lighted parking lot they would only add a hint of light to the side. Plenty to light a menu board. I'd say they are not as bright as a 60 watt porch light.
Re:Food Truck Build 1979 P60 (BelCibo)

daddywoofdawg

What are you using for a receipt printer?and where and how much I need to get one this month.

Ah receipt printer. Here's the latest on that. The printer is an ethernet and the only ones Square recommends are ethernet. The trick is to get your 4G/3G phone or MIFI to an ethernet port. The way I plan on doing it is either use my phone as a hotspot or buy a MIFI. Then get a Cradlepoint MBR95 that will take the Cell phones wifi and get it onto the ethernet. The printer will direct plug into the router, the Ipad will hit the router wirelessly. Wala, printed reciepts, order numbers, chef tickets etc. I should have mine up in a few weeks and can share the results and how to set it up. We are adjusting layout for this weekend and its just not high enough on the priority list.

MIFI is also coming out with a hotspot that has ethernet the second week of May. That will allow you to eliminate an extra piece of gear.

Re:Food Truck Build 1979 P60 (daddywoofdawg)

What are you using for a receipt printer?and where and how much I need to get one this month.
Re:Food Truck Build 1979 P60 (SantacruzTacoCo)

 right on!!!
as long as the wife is happy don't care what anyone else says!
Re:Food Truck Build 1979 P60 (BelCibo)

Our first day is over now. Not long after we arrived the inspector showed up for our first real world inspection. Everything passed with no findings. He cautioned us on not having an AC unit installed, said something we should think about adding.

Started the morning at the Farmer's Market as the newbies. Sold a few breakfasts but the rush hit around 11am and lasted until probably 12:30. We had long lines, saw some people leave the line, but had lots of praises on the food and were told the food was raising quite a stir around the market. We had several that came back and ordered more. Cycle times were way too slow as we figured out our system. Checking the order times on Square Register, which worked great by the way, we were around 3 minutes per order. All the equipment worked, layout needs some tweaking but overall it was a fast paced thrill of a ride.

And most of all as they say, Happy wife..happy life!

Re:Food Truck Build 1979 P60 (Rcoy)

Awesome, Nice setup and great pics.
