In most cases you want the Crema to be the cooling effect to the seasoned chicken wing. I use Sour Cream, a bit of milk or heavy cream, you would also us some Avocado smashed loosen with sour cream, whipped thin . Most of the BBQ seasoning guys could do this with changing a few spices in their rub..................
Re:Green Chile Chicken Wings Cooked on a Plow Disc (lleechef)

Count me in as one of those enamored with anything involving green chiles! Those wings sound great.
Green Chile Chicken Wings Cooked on a Plow Disc (Foodbme)

When I saw this recipe I immediately thought of all you RFer's who are enamored with anything that involves Green Chiles.
In addition, the unique cooking instrument adds to the unusualness of the whole scenerio.
Cooking anything in a plow disc is unusual, however, this method seems to be catching on, especially out West.
Let it be noted that I am in no way connected to the Disc-IT Company. I'm just a curious on-looker who is thinking that maybe I'd like to try it!
http://disc-it.com/blog/775/green-chile-chicken-wings-on-the-disc-it/
