Gumbo doesn't use andouille. Their sausage is Hillshire Farms Black Oak.

BB, it's a much better location than her original place on Clarksville highway. There is a good amount of foot traffic there, and she doesn't need that much space for cooking. 400 degrees probably does five times the business since she moved.
Re:400 degrees, Nashville (buffetbuster)

What makes me wonder is why such a great place is in a food court?
Re:400 degrees, Nashville (Michael Hoffman)

There is a J Gumbo's right here in beautiful downtown Gahanna, Ohio. When they were about to open a couple of years ago I contacted the corporate office to ask whether they used andouille sausage. I figure that a place calling itself J Gumbo's should be using actual Louisiana ingredients. I was told they use regular smoked sausage because you can't get andouille in Ohio. I found that interesting for a couple of reasons. The previous day I bought some andouile at the supermarket, and I'd been to a few restaurants in the Columbus area where they serve andouille sausage, among other stuff from Louisiana. Anyway, I've not been to J. Gumbo's.
Re:400 degrees, Nashville (Poverty Pete)

Yes, they have 0, which is plain, 100-mild, 200-medium, and 400-hot. I believe I've been to all the chicken houses in Nashville, except for Pepperfire. 400 degrees is where I usually end up going.
Re:400 degrees, Nashville (wanderingjew)

I really wanted to check out 400 degrees last year.
