Hey 'yall,
  Second weekend in operation of a new cart here. I started with Nathans, cause I knew I couldn't go wrong with those. This was before I got my Sam's card. With the NAthans @nearly 3.80 a pound, I just bought a pkg. of Sabrett's. I haven't opened them yes, I will today when I run out of Nathan's (Guess I better change my sign). I've had them both and like them both, but, @ less than 8 buks for 3 lbs of Sabrett's...do the math...I truly prefer Boarshead, they are nearly 3.80/lb and taste awesome, but with 2 other cart vendors in the area carrying Boarshead, I figured that was enough and something different was in order.  I haven't had the courage to even test the BallPark all beefs that people tell me are good. I won't even consider a Bryans, Oscar Meyer, ArmorDial.
  What I didn't find in the FAQ "Newbie" section was any discussion about dogs holding their nice red color while on "hot hold" on a slow day when there are too many dogs down. I heard about dropping a beef bullion cube into the water. Anyone know if this helps? People really don't want a brown dog. They taste fine though. I do finish my dogs and brats off on the little gas grill that I have which helps. I do not split them lengthwise on the grill and have read that this will help the flavor. Any input here?
  I had to pass up on a nice downtown event that the parks and recreation department of this county offered an exclusive for my dog cart on because I haven't gotten my liability policy in place yet. My property tax payment to the county covers a large portion for the schools of which I have no kids attending. I am sure that the budget for the county's insurance comes out of the property tax that they collect. Maybe they can give me a pass on the liability.....hmmm..I am bettin not...
  Back to the subject..I think Nathan's are tops, I am gonna give the Sabrett a try today.

        Sarah Palin and her family have been to the Matsu Family
    restaurant before and like our food. Unfortunately, we don't sell hot dogs per se, but we do sell Polish sausage and Hot links. Maybe we can do something with that.

      I recall an earlier thread where a question about dogs going gray as they sat waiting in hot water was answered by lowering the water temperature.  Sorry, I don't recall what the right temperature was.

          I'll look into definitely gertting a wind guard made for the firebox so I can control the flame a little better. My cart didn't have one when I got it. The burners are a little old style as well, matbe they need a bit of upgrading to get more control of the flame.
        Side by side test today for me, I couldn't distinguish any difference in the taste of the two dogs...I'm goin with Sabrett. They sure want a lot for the Nathans here..much more than I am reading about in previous posts.

            When passing a dawg cart and in the mood for a hot dog, I will get one if a Sabrett, Vienna or Nathan's (slight preference for Nathan's) brand is displayed as being served.  If no brand is shown and upon inquiry the response is Ball Park, Oscar Meyer, an off brand or others I've never heard of, I will pass and go for a burger or something else instead.  How many of you have a sign up displaying the brand of hot dog that you serve?  If no brand is shown, some think that many customers think the owner just gets whatever's the easiest or cheapest to get that day.

              Don't put up a sign myself. Have signs just don't put them up. Most people never heard of  brand I sell anyway. They just know it's good. Have all kinds of northern transplants and they love the product.
              Cannot buy my brand in any store.
              That would be like going to a Red Lobster,or any fish restaurant and asking which Ocean did the shrimp,oysters or fish come from. If they are that snooty move along.
              When you order a lowly grilled cheese do you inquire about which brand of cheese. Think not. Don't sell alot of them at $42.50 but then again don't want to.

                Also have had a customer finally tell me he had driven a 100 mile radius trying to find the sausages I sold. Asked where I got them, laughed, just told him you cannot buy these anywhere. Speaks for my brand.

                  I sell only Nathans and I can't use their name in print. You have to sign a trademark agreement and I don't have an account (long story) with a distributor yet. Until I get one, I assume I can verbally answer a persons question When the answer is "Nathans", I get a good response.
                  I can't wait to be able to use their logo though, great name recognition!

                  It is a shame to sell such a great product like Nathan's and not get the recognition.  I would print off a little colorful sign on my home printer, something like "We sell Nathan's hotdogs" and tape it around the cart somewhere.  Many of those who had second thoughts would decide in favor of getting a Nathan's hot dog, I would think.

                      No can do. Not legally, anyway. If I did put up a sign I kinda doubt Nathans would ever find out. But I would know and Karma being what it is.....

                      Take it from this old retired lawyer, the risk of any issue ever arising over such a homemade sign is so extremely slight.  And even if there were an issue --which I very seriously doubt -- the remedy is always "cease and desist" (meaning take down the sign) before any further legal steps are taken.  So there is virtually nothing to lose.  No client of mine would spend or waste the money to stop a hard working hot dog cart owner from using a simple sign (as long as it honestly represents what is being served).
                       
                      But in any event, good luck to you.  Sounds like you want to do what you like and serve some good food.

                            Lickin the dew off outside of Bottle though.

                              You guy's must try Thumann's dogs in the natural casing. As a consumer not, a vendor, I think they are waaaaaaay better tasting than any of the previously mentioned dogs. Including, Sabrett and Nathan's. I used to love Sabrett until I tried Thumann's. Not too salty with a garlicky snap to them and nice texture similar to a German veal sausage.

                                Which version did you try? Thumann's makes an all beef, which is a very good dog. It has garlic, but is milder than a Sabrett's or Nathan's. Their beef and pork dog, which is in the German style, is more like a German sausage. It has no garlic. This one comes in a blue and white package and is outstanding. It is my absolute favorite beef and por dog.

                                If you are talking about this one, it is hard to compare it to Sabrett/Nathan's because they are 2 different styles. Spicy (paprika/garlic) kosher style compared to a different, milder spiced German style frank. Like apples and oranges. But Thumann's is my favorite for it's type. For a spicy all beef dog, Best's from Newark, N.J. (not the Chicago company) is my favorite.

                                  I'd have to say my preference is natural casing over skinless.  Either Sabrett's or Nathan's--both are sold both ways.  Gotta have that snap.
