I'd first contact your local dept of health to check on ordinances regarding selling homemade food. Every place is different. Around here I would have to lease oven space in a bakery or restaurant. You may have to also obtain a food handler's license.

I am pretty sure that everything Jennifer said applies most everywhere especially in NYC. Check with the restaurants you want to sell to and they should be able to tell you right there what is expected. (maybe take them a free sample to see what they would be getting.)

Take pictures of your bakery. Make a copy of your Food Handler's License. Introduce yourself to the owner of the establishment. Supply him/her with pictures of the cakes you would like him/her to carry as well as the cost. Give him three cakes prior to there busiest day then return three days later with three more cakes different than the first. Seeing as he/she will be six cakes ahead on profits and knows your product to be quality they should have no problem carrying your goods....Russ In return for this advice I would like the recipe for your finest chocolate cake and chocolate icing.
