
Around here you can buy whole pig heads for tamale making,I think mainly in the fall.Never head of brain sandwiches,but i recall my dad saying grandma would make brains for grandpa sometimes.He was a butcher,so brought a lot of good meat home.
They are a lot of work. My mom would eat sweetbreads my dad would cook.But i never ate any.Was years before I would eat Liver with bacon and onion.
They don't have any Jungle jims around here.there is a Culebra Meat Market No.5 on Nacodoches Road here that also sell tamales.Bet they have lots of smily pigs and cow heads(for Barbacoa),pig tails,etc.
Most barbacoa around here is cow cheek meat,and depending on the place you buy it from,you might even find an eyeball in it.Yuuuuck! Chipolte's has good barbacoa,as does one of the local joints around here.
