CRAZY idea for late night!

So I've been working the late night with hot dogs for about a month and a half... it's been much more consistent than my days.

A crazy idea came to me this morning... what if I completely ditched hot dogs and served biscuits and gravy? This would undoubtedly go over well with the late night tipsy crowd, I'm just not sure how well. Who doesn't like biscuits and gravy after a night of partying? I could also have other toppings available on the gravy like shredded cheese, hot sauce, etc. It would be super easy to do on the cart, cheap and different than what anyone else is serving right now late night.

I'm curious to hear anyone else's thoughts and ideas... remember I'm not doing a morning breakfast thing for people on their way to work... its for party people very late at night.

    This may work for you but we tried the same thing and it was an epic fail.  People told us if they wanted biscuits n gravy they would go to waffle house/ihop etc. and "get breakfast" meaning the whole deal: juice, toast, eggs, pancakes, etc.  Lots of places do that, I would rather serve a great dog.     Thanks Panther! When were you doing this? Normal morning hours for people on their way to work or late night/bar time?

    You would have to have incredible fresh baked biscuits and an equally great sausage gravy, not pop & fresh with chef mate gravy from a can..
    Stick with the dogs!
    Like panther said, if I want b&g, I'm going to ihop, etc.

    Ok, thanks for the input guys. I still think this is a viable option, but maybe I'm nuts... I think you guys have to think outside the box a bit more! Lol the area that I work in is pretty unique... there are literally hundreds of college students and young people that are walking around and pass my cart late night. There is 1 other hot dog place about a block from me and there will be another 1 set up when the weather breaks. There is no Denny's or any place like that in this area... I think some of you might be thinking I'm talking about a breakfast or lunch shift... I am talking extremely late night... 11 p.m. or later. I think I will give it a shot because so many are saying that won't work lol.

    Why not, keep the dogs and make room for the biscuits if it doesn't work what have you lost. Some people might not like burping dogs the morning after.

    It's been a while but, I don't remember after a night of drinking - man I'm fitt'in for some sausage and gravy. Why so excited about sausage and gravy. There must be 50 more practical options. Drunks can't use SPORKS!

    Fresh biscuits won't be an issue at all...I'm thinking I can steam them and I already found a bakery that will make them 3 days a week. Worst case scenario I can freeze them...

    We don't have many biscuits to be found here but ...SOS is right up there in late night/early morning Diner sales..after a night out. It makes waking-up easier.

    sh*t on a shingle...chipped beef and gravy on toast.  Navy version was ground beef in tomato sauce on toast.

    First, would the HD allow this?
    Have you worked out the logistics?
    Can you keep the biscuits warm yet not soggy or dried out?
    Would you make the gravy at the commisary from scratch right before you head out or ahead of time and refridgerate it or freeze it?
    Can you keep the gravy "fresh" for 3 hours?
    Would it be one big batch served until it's gone or would you be "refreshing" it as the hot stuff gets low?
    How would you serve it? In a bowl? I'd be concerned about plastic forks breaking.
    Do you have room to do this and dogs? I don't think I'd give up my dogs that I built my business around.

    If a biscuit smothered in gravy breaks a utensil....it's time to go back to the board on a biscuit recipe.

    College kids don't really worry about making a mess.

    After the gravy soaks in it should be soft. A drunk may jump on it and be sloppy. Easy to break a tine off a fork and swallow it if you're cutting bites.
