When does a steak become a roast?

I was reading a story about late night, quality food for hipsters. It is a new trend. Lots of places now have special food after 9 or 10. It has to be "new" and "cool", and is often shared. (not all that new..........my generation went to all night breakfast places)
 
One place serves a really big, crusted, steak (72 oz I think), and only 8 per night. It can only be ordered after 9, each one is numbered, and is served to be shared. It costs hundreds of dollars. It is about 5 inches thick. It looks like a small roast. The story did not say how it is prepared, except to say it takes a long time.

    One merely needs to peruse the menu prices in some establishments here in Austin, particularly the "Domain" to see that.

    A few local places in the Chicago area offer 72 oz. steaks...in the 90 to 125 range in pricing...but its carved table side and feeds 3 or 4 people with all the sides served family style, just with a small sald and potatoe of choice.  I pretty good value, and you you can order it anytime....but it requires about an hour to prepare, because they put it into the oven first, then on the char grill....comes out brautiful and tender.

    Words like trendy and most of all hipster make me avoid  these places. Oh, we are to cool, we only serve 8 of those a night! Each one is numbered, what they can't count to 8? Wonder how long before this place shuts it's doors?

    I don't think it will. It's trendy and hip and all that. Just like the lines at Franklin's BBQ will never get any shorter because they are trendy and hip too. I can always drive out to the Big Texan in El Paso and attempt their 72 oz monster and if I can eat it all in an hour it's free.

    Just like my Dad grilled them in the 1960's. Not too hip.

    I bought  a two pound pork tenderloin with the intentions of making a pork tenderloin sandwich per Davydd's instructions.  I have everything I need now except dry mustard.  Sorta looking forward to doing it.  I bought the small slider buns also and some home grown Grainer county tomatoes.
     
    The photo almost made me change my plans.

    Yeah and I sorta realized that after I posted it.  I guess it was because it looked like the sleeve of pork tenderloin I purchased and I was focused on Davydd's  tutorial on how to make the pork tenderloin sandwiches that he had experienced in 140 different places.  He did a beautiful job on that.  You can tell that he is a architect by the exact way he described the process.  Regardless, my bad and I will do my sandwiches tomorrow.

    A Weber Kettle Grill could be considered an oven if you kept the lid on most of the time.
