Does anyone from Nashville, that's familiar with the topic, care to step up and describe this regional dish. I'm only aware of it and not at all familiar with it.

One example is

    I'm not sure if I am right on this, but alot of the people that go to these hot chicken places are musicians and music industry types. They all seem to be into the heat rush. Plus many of the places (Prince's stays open til 4) (Mary's "Atomic" barbecue is open 24 hours every day -they specialize in hot ribs) used to be in vogue 20-30 years ago before Nashville had many restaurants that stay open late like they do now.
    Another many of them like Waffle Houses--it's the only place open late when they are in the road in smaller towns.
    Many country and rock performers started going there decades ago because they stayed open so late and were near downtown venues and word of mouth spread.
    Just a theory.

      You may be right. I first found out about hot chicken in 1995, when one of my favorite bands, Yo La Tengo, released an album they had recorded in Nashville called Electr-O-Pura. Two songs on the album are subtitled in honor of the local delicacy, "Flying Lesson (Hot Chicken #1)" and "Don't Say A Word (Hot Chicken #2)." (Country-rock fans will also recognize the obvious tip of le chapeau to Gram Parsons, who titled a couple of his songs with the Flying Burrito Brothers "Hot Burrito #X.")

        I am sad to report that Boos Hot Chicken on Donelson Pike is closed. Mr. Boo suffered another stroke this summer and their message stated that they didn't know if they would be able to run it without him.

        They were in the process of moving to a larger building, and I haven't seen any indication since this summer that they are going to reopen. I had a once to twice a week chicken habit since it was just down the street about a mile from the office. Fresh cut chicken, deep fried, then coated (and I do mean Coated) with their dry spice mix. I bought some of the spice and tried it myself. It seemed to burn easily, but was incredible applied while the chicken was still hot.

        Lorrie Morgans I haven't tried yet but have heard that it's good. I Plan to try Princes later this week.

          Laurie Morgan's place is pretty good, if inconsistent, but not on the level of Mr. Boo's. I suspect you'll be much more content with Prince's. The best thing Morgan's place has going for it is the location, right on I-24, with lots of parking.

            Thanks for your comments. I was in Nashville once about 35 years ago and now would like to go back to try this regional dish. I first saw this (and I'm ashamed to say I was watching) when Bobby Flay did a Food Nation episode there.

              Nashville is blessed--besides being the capitol of the hot chicken is also the innovator of the "meat and three". I lived there for 25 years and still have about 50 restaurants on my list that I never got to. BTW, I remember when Yo La Tengo was recording in the studios--just one of many band's bewitched by Prince's.

                Unfortunately Boo's has never re-opended. I work near the airport and really miss it. I am also a fan of Prince's but can't get out there on weekdays and the weekend wait is very long. I tried Wilma Kay's hot chicken a couple of months ago and was not very pleased. The black pepper in their spice mix overpowers everything else.

                                My husband saw a show on the food network a couple of years ago that did a piece on Laurie Morgan's hot chicken. Rich thought it looked so good that he called them up and they sent him some in the mail. It came Fed-Ex in a styro-foam cooler complete with instructions. I didn't try any, being a vegetarian for the most part, but I know he really enjoyed it because he ended up wearing most of the sauce!

                                  Laurie Morgan's hot chicken is pretty good, but different from the other Nashville joints, being deep fried, rather than pan fried. Also, I have experienced more variation in the quality. Sometimes it's really good, other times less so. The thing I REALLY like there is the potato salad. It's the perfect foil to the blazing heat of the chicken.

                                    Here is a link for those who can stream video about Bobby Flays trip to Nashville for Hot Chicken. I've seen Flay eat some hot stuff before and not flinch but the expression on his face after eating the Nashville heat is priceless.

                                      That was funny!
                                      I went to the newest hot chicken joint in town, Emerial's. It's in Greenbriar. If I had never had it before, I would have liked it, but the competition in Nashville is formidable. Emerial's chicken was small and greasy. Despite my server's warning that the hot would be too hot to handle, it was considerably less hot than other places around town. I always like potato salad with my hot chicken. Emerial's was ok, on the sweet side, but not really up to par. I may return, due to the location, but this isn't the place I would take visiters.

                                        Pete, thanks for the Emerials review. From the recent story I read online from the Tennessean I didn't get it would be hot enough to get me anywhere near my happy, near "spontaneous combustion" mode. Any competition is good though.
                                        I live in Augusta, GA now and have to bring my own little bottle of Blairs or Daves Insanity Sauce to "tighten it up". Not to mention being looked at as if I'm from outer space asking where the "meat and three" is on the menu!

                                          I sure do wish Knoxville had a hot chicken or hot fish place. Nashville seems to always had this delightful menu.

                                          I love Knoxville but we do not have the neat eats.

                                            The word is out, Hot Chickens has CLOSED! Here is a message from a friend in Nashville:

                                            I've been up to the restaurant twice over the last couple of weeks. Both times there has been a sign posted on the door simply stating "Closed for Repairs" and there were some work trucks around. Today when I stopped by, they had taken the sign down off the building. Getting curious about what was going on, I checked their website only to find that there was no information about their current situation. I called the phone number listed on the website and found that it had been disconnected. I then sent an email to the webmaster of HotChickens.com to see if someone could tell me what's going on.

                                              Emerial's in Greenbriar has also closed.
                                              I saw a new place on Lebanon Rd. near Donelson, but haven't had time to go there yet. Emerial's is not a great loss. HotChicken.com was better, but still not as good as Prince's or even Wilma Kaye's.

                                                      I ate at the new hot chicken place in Donelson this week. It wasn't bad. It's called Dixie's Hott Chicken and is actually on Old Lebanon Rd. It's that little offshoot off of Lebanon Rd that runs behind the Ford Dealership. They actually serve 2 sides with their chicken so it costs a couiple bucks more than most other places, but is not too bad a deal.

                                                      The chicken was not nearly as hot as the other places where I have eaten. I had the medium and it was not much hotter than the spicy chicken at Popeye's. Of course the sides may have cut the power of the heat. I actually had chicken tenders which is nice because it was a workday lunch and the tenders greatly lessened the chances of me getting food on my tie.

                                                        Why is it that Nashville has great hot chicken and Knoxville has no chicken except KFC and some other stuff?

                                                        Nashville has also had good ethnic places that served great fish sandwiches which Knoxville does not have or has ever had?????
