Frozen biscuits vs. canned biscuits Sun, 01/13/08 1:41 PM (permalink)
I have bought the canned biscuits for years in the paper wrapped containers. They always tasted pretty good but recently I have bought the frozen ones. I just baked some and they came out huge, flakey and tasty.

Has anyone else have some comments on this?

Some advantages of the canned ones is that one the flakey ones, I can separate them and insert cheese or whatever to prepare for breakfast. The frozen ones definately are superior in taste at least in my opinion.

We haven't purchased the canned in many years - except for making quick donuts I don't think I'd buy them again. Most of the frozen variety are pretty good.

Since discovering the frozen kind, I rarely buy the other!

My wife can't make a biscuit at all

I found the frozen ones a while back, they are so much better and quicker than hers

I love the Grandes biscuits...flaky and moist. But I consider
them a different category than frozen, cause the frozen are
significantly more like homemade. I've no problem with Pillsbury
frozen for any use that calls for biscuits.

Same thing Paul, since the frozen ones came out I don't even waste time with the canned sort anymore--except for quickie beignets, like Larry said. Do you know you can't get the frozen ones up north (meaning MN)? It's a real shame.

You must be talking about Pillsbury's biscuits. They're wonderful. They're so good that I stopped baking my own.

I like them because I can bake just a very few and they come out very big and flakey.

I did not buy Pillsbury but I bought the local grocers version which I assume are the same as they look the same but about about a dollar less.

I have noticed that it takes at least twice as long to bake them. Generally it is about 20 minutes at 400F.

I've never bought the frozen ones...they cost a lot more for a lot less, at least in stores here. However, if they ever go on sale (which the Grands in a tube do at least twice a month, I've never seen frozen on sale) I'll pick some up and see if they're better.

I don't like the flaky layer biscuits, though...I prefer the more solid "Southern" style.

Paul I'm shocked, shocked I say.
I thought you southerners held your biscuits in the same regard as your grits.
Nothing like a homemade biscuit and very easy to do.
I understand you like myself are somewhat on your own now, but you can literaly throw these together in minuites.
Sometimes I cheat and do a self rising flour with some buttermilk and mayo mix, plop that in a small 4 unit muffin pan that I have. Works great.
If I make a full batch I freeze them for a latter time and they stand up pretty good in the freezer.
I will confess though those frozen biscuits are damn decient.

OK...they actually went on sale and I bought some. AWFUL!! Perfectly AWFUL!!

No, that's not fair. They tasted OK, but definitely NOT better than the ones in the can, about 1/4 the size, and even on sale cost twice as much. I got a bag of the ones you bake and a bag of the ones you can microwave, and neither of them were worth it and I wish I had my money back. At least the ones you bake give you (I think) 12 in the bag...the microwave type come eight in a bag for the same price.

I'm really pretty disappointed...I think this is the first time y'all steered me completely wrong on something.

Oh yeah...the frozen ones were Grands, so it's not a brand difference as that's what I buy in the can as well.

I am sorry that Felix had a bad experience. I buy the store brand at Food City. I had them this morning and they rose very nice and browned very nicely. Very fluffy and tasty. They were not a national brand and probably the cheapest that Food City had.

Mamaw Smith has used them for years. She occasionally makes scratch biscuits but she is 86, making the biscuits are sorta messy and these are much faster. Much different than canned biscuits. I buy both.

I live by myself and one of the reasons the frozen jobs work for me is I can bake one or two and keep the others frozen in a container.

                            Sundancer,
We're looking for a good quick frozen biscuit, not in a can, to use in making biscuits and Gravy. Can you mention a brand you recommend?

Paul, I will have to try those. I live by myself as well and the convenience of being able to make only a couple at a time would be wonderful. I have found that Food City's store brands (FC Premium and Food Club) are, in general, very much comparable to similar name brand items. They have done an excellent job with most of their products.

Re: canned vs. frozen. I personally think that canned biscuits, no matter the brand or type, have a funny "off" taste and smell that I can't pin down. I haven't tried frozen ones yet to see if they have the same taste/smell.

My wife is from the same neck of the woods as Paul & Mamaw Smith, she makes great biscuits from scratch when we have a crowd. However, there is always a bag of Pillsbury's Grand Buttermilk biscuits in the freezer for just the two of us as we only need one each. They are very good.

This is so easy it's sinfull.
                                          2 cups self riseing flour
                                          1 Tbl. sugar {optional}
                                          2 Tbl. Mayo
1 cup of milk I use buttermilk if on hand
                                          Thats it.
I just mix all ingreadients untill incorporated then spoon into my muffin tin. Bake as normal, they only take about 20min.
If you don't have self riseing flour on hand make your own and store in a sperate container for future use. Chow Jim

I started using frozen for the same reason as Paul, you can make as many or few as you want. I will have to agree frozen are much better. I use a brand called Mary B's, they also make dumplings that are pretty good. They are frozen in strips and are kind of hard to handle if you keep them frozen for a long time, they are hard to separate.

I've only purchased the canned ones wrapped in a tube.. A couple years ago I started making my own, and now prefer to put a little extra time and effort into making my own. Seems every time I make them, they get better in quality..

We like them a lot. We have bought both the Pillsbury, and the Mary B's, and they're both really good. They taste just like the biscuits at Hardee's.

If you don't make your own biscuits you may as well go to instant grits.

Now for my real recipe, and most every other persons also.
                                                      This is for 2 people

2 1/4 cups of ap flour
                                                      3/4 tsp salt
                                                      1 tsp sugar
                                                      4 tsp baking powder
1/3 cup of very cold butter
1 cup of very cold milk

                                                      Mix dry ingreadiants
cut in butter {I cube mine} untill it looks like small beans
Start adding milk slowly while mixing untill it just comes together
At this time I form into a small rectangle wrap and chill 1/2 hour or so but this is not nessesary.
Turn out to a lightly floured board and roll to 1/2 to 3/4 in. thick and cut desired size.
                                                      450 deg pre-heated oven 8 to 10 min. Done.
Start to the first bite about 20 min.

What I do on occasion is mix my dry items together in the morning and put it aside for latter or sometimes I mix the whole batch and refrigerate untill needed.
If you have a food processer it's even easier, in fact too easy.

Which is strange since the Pillsbury headquarters is in Minneapolis.
