I am in FL. The Division of hotel and restaurants say... 1) UNIT# MUST PERMANENTLY AFFIX IN A PROMINENT PLACE ON THE VEHICLE IN FIGURES AT LEAST TWO INCHES HIGH AND IN CONTRASTING COLORS FROM THE BACKGROUND OF THE MOBILE UNIT THE UNITS FOOD SERVICE LICENSE NUMBER. 2) LICENSING INSPECTION MUST BE CONDUCTED AT PRIMARY COMMISSARY. 3) UNIT LIMITED TO ONLY HOT DOGS AND PRECOOKED, ENCASED SAUSAGES AND INDIVIDUALLY PROPORTIONED/PREPACKAGED FOOD. NO HANDLING OF CHILI OR OTHER POTENTIALLY HAZARDOUS FOODS OTHER THAN HOT DOGS IS PERMITTED. 4) NO HOME PREPARATION, COOKING OR STORAGE OF FOOD IS ALLOWED. 5) UNIT MUST REPORT TO COMMISSARY LOCATION EACH DAY OF OPERATION. Any one from FL. that can explain this? they say that I can sell in indivisual servings via containers with lids , What a hassel

don't take crubside grill too personal. he's not a professional hot dog vendor and just likes to bitch. FL hd wants the individual servings of condiments in the little plastic ramekins. it's about .05 additional each, but compliance keeps one on the "good" list. visit your commissary.

Serendipity Dogs Thanks you were allot of help. Why do you even bother to post such great knowledge? I am glad other folks have you to help them out. Keep up the good work!! No I just hate FL rules. they get tougher all the time. What I've read from Fl laws is each individual article has to be prepackaged. Other than hot dogs and buns.

Gene's Dogs don't take crubside grill too personal. he's not a professional hot dog vendor and just likes to bitch. At this point no I am not a dogger. But in past life was, and no I don't Bitch, I get off topic as most here can attest to. I've slung more dogs and Sausages that attacked me in my sleep.LOL Big events(2 A YEAR) I hire a retired short order cook that will out do anything I have seen.He has taught me a thing or two. Wife does drinks and money, Worm cooks and I assemble as to order. Daily lunchs me only, small events wife and I. Oh by the way have posted pic's in the past of what my cart looked liked. They where lost with many other pics here.

What county are you in? I live in FL and my uncle runs a cart here with chili and has no problems. Nevermind, I see you're in Okaloosa in the panhandle. I'm in Marion and it's not that tough here.

BillyB I don't see where it says you can serve chili..... It is not saying you cant serve chili. It is saying you cant serve chili on the hot dog straight from the pan. It has to be in a proportioned cup or prepackaged container.

Looks like the Florida HD needs to review their policy. I bet if you asked the HD why you need to proportion the Chili you won't get a answer. ............. If Chili is a Potentially Hazardous food then its going to be a Hazard if its in a container or on the Dog........Ask the Question WHY

If Chili is a Potentially Hazardous food then its going to be a Hazard if its in a container or on the Dog........Ask the Question WHY Florida HD is just as completely f-ed up as every part of our beloved state government is. i give kudos to each of the inspectors who figure it all out. i'm not going to ask why. thank goodness every inspector i've met is sincerely about food safety. my condiments go into an ASL 200 on an entirely regular basis and i don't serve chili. i'm pretty sure the state official who came up with this condiment procedure never had a good chili dog and probably not even a hot dog....**** he was probably Jeb Bush's gardner!! most state capitals are in the center of the state. we need to move ours. it's all about revenue and it makes me sick and want to move to the woods! ...problem is, i have trouble killing things and it would be tough to make my own hot dogs. i'll need to buy them ready-made my neighbor who moved across the street in 1953 said he hasn't heard of the "Shoeshine State" either. people don't really wear shiney shoes any more

I heard in the national forest near me, there are a bunch of hippie commune type of people who will rob you, steal your car, and take your kids or even kill you. My aunt lives here in Ocala and she told me about them. They call them the "Rainbow People"

There is a bar or two that I've stopped at in that area. strange people. But if you want the whole older hippie Commune you have to travel here. Something or someone had to screw it up someplace............. you're probably right. government has always had the tendency toward overkill when trying to fix a problem. i've often wondered why the city water coming out of the faucet at my commissary is healthier than the city water coming out of my faucet at the house. it obviously is, because i'm required to fill my jug over there! lol while doing research, i hit every hot dog vendor i could find in NE FL for over a year and honestly, there are some pretty nasty carts out there. problem is, they're the ones who aren't following the rules anyhow. at 50, my cosmological contemplation has increasingly involved the possible virtues of anarchy. i've gotten in more trouble in my life for being honest....

Gene, We eat at the carts in Mexico. I check them out before we order. I see people selling Tamales from 5 gal buckets. They have the best Fish tacos, Shrimp tacos, birria and so on. I like the sanitation and regulations set in place by the Hd. I always ask my HD why, if they don't have an answer I ask them to get me one. It makes us all smarter in our business. I would not want to have a HD cart in Fl and not know the reason why I had to do something. What answer would I give my customer if they ask me to put the chili on the dog. My answer would have to be the health dept wants it that way. I think the HD has old rules and regulations on the books and doesn't even know why they are there.

I wonder if those small plastic containers can handle 165F degrees. I tried to use the small restaurant quality thick plastic container for my canned, beanless chili with the lid above a stainless container with water in it and where the steam escapes...melted the lid to the container..almost..and when I lifted the lid to serve..the stringy melted plastic had to be dealt with. I took a sharp knife and trimmed the plastic and turned down the flame....oops! The problem I had with a stainless small pan was that it wouldnt quite "nest" into the container with the water , leaving it raised up a half an inch. Any suggestions?
