Intensely beefy broth, with a touch of smoky flavor, mucho Brisket, veggies

    I'm sure you can't part with the recipe, but I'd love to make that in our slow cooker.  What a great looking soup.   Wish you could  move your restaurant down South.

        I'm sure you can't part with the recipe, but I'd love to make that in our slow cooker.  What a great looking soup.   Wish you could  move your restaurant down South.


        Happy to share the recipe, can't give small quantity as we always do 30 ot. batches
        Canned, yes canned, beef broth
        Beef Base
        Smoked Brisket, most all fat removed, cubed
        Pepper
        Vegies you like, no tomato however, cuts the beef flavor
        potato 
        carrot
        green bean
        peas
        Simmer till potato is done, don't boil, dries out the meat
        That is it, couldn't be simpler! To not share a recipe shows, to me at least, a misbegotten insecurity, as people can do your recipe a 1000 times and will swear they can't quite match up to your version.

            Slow cooker would be good, you do need a fully smoked brisket, defatted, a little is okay, but you don't want greasy broth. cube it to desired size. LOL about the 5, so true!

               MellowRoast - Unless you have a small piece of brisket and only use a couple of vegetables, I don't think a crockpot is large enough to cook everything in.
               
              I use a crockpot as a starter for cooking 1/2 brisket from Sam's and whatever amount of water it will hold, which is about half of what the soup needs.  Once it's cooked - separate the beef from the strained broth into separate containers and refrigerator overnight.
               
              The next day defat the strained broth, add extra broth (I use beef Redibase) into a large stockpot.
               
              In stages, (what cooks fastest, gets added last).  You can also double what you like best, omit those you don't.  I use fresh vegetables except for the corn, barley, and tomatoes: 
               
              potatoes
              carrots
              celery
              1lb. can of whole tomatoes, chopped with juice (unlike chewingthefat, I don't find that small amount detracts from the flavor)
              small box of frozen corn kernels
              fresh green beans
              barley
              cabbage
              cauliflower florets
              okra - have used on occasion when I had it
               
              I'm not home to list the seasoning for cooking the brisket,  but can post it later.

                Great sounding recipe Belle! is right!  Like you suggested it does need some celery.  In moderation though. Just enough to barley taste it! That's the secret to using Celery in recipes. Done right most folks would not even know it's in there. Kinda like on a Chicago Style Hot Dog.
                 
                But... some big chunks, pinkie nail size, might be good in this ??? Hey, it's a brisket veggie soup.

                  Now this soup is more to my liking Mr Chewin'.
                  I think it is more better than the bacon and cream mius the clams.
                  If you need celery there is plenty in Papa Joes Post--

                      I make a BBQ sauce I call "Cold Remedy", has a bunch of fresh horseradish in it. It be good!

                        Those early French in NOLA, were very thrifty, they'd cook boiled brisket (boulli)  for dinner, then use the leftover meat, broth, and vegetables for soup.
                         
                        From Richard and Rima Colins' The New Orleans Cookbook:
                         
                        Horseradish Sauce
                         
                        6 TBS. horseradish
                        1 TBS. Creole mustard (brown mustard might work if you don't have Creole)
                        3 TBS. white wine vinegar
                        1/4 tsp. ground white pepper
                        1/8 tsp. cayenne
                        1/8 tsp. sugar
                        1/2 c. heavy cream
                         
                        Combine all of the ingredients except for the heavy cream, mix thoroughly, and let stand for 15 minutes, then add the cream.  Cover the dish with plastic wrap and refrigerate for at least one hour.
                         
                        Seasoning for cooking Brisket (recipe call for 2 qts. of water in a stockpot - if you use a crockpot you might be using less water, so you may want to halve some of this.)
                         
                         
                        (Some of this is me, and some of thisis from the Collins')
                        2 Beefsteak tomatoes cut in quarters
                        2 medium onions cut in quarters
                        6 carrots cut in half, and again crosswise
                        4 green onions, cut in 3-4" pieces
                        4 stalks of celery cut up roughly
                        8-10 stems of parsley
                        2 TBS. salt
                        1/1/2 tsp. freshly ground black pepper
                        2 bay leaves
                        1 tsp. dried thyme
                        6 whole cloves
                        6 whole allspice
                        1/4 tsp. cayenne
                        1/4 tsp. mace

                          Bella Bambino Belle-------we gonna straighten this CTF guy out.  Ya gotta have horseradish man---like who ever heard ah brisket without horseradish.   Ur cold remedy must taste like Vicks----we're talking like real horseradish, man, cleans out your sinus, your E-soph-e-gus-and your bowels ---all for the same price.

                              Papa Joe------Brooklyn and Far Rockaway are far, far away from Texas
                              and bar-b-q and smoked brisket.  A nice piece boiled brisket needed something, anything, for taste.  Gold's Horseradish not only gave some zing to dinner it killed the taste of everything else.  And that was a good thing !!!!

                                PapaJoe, I looked it up, your absolutely right, Brisket abuse carries a minimum 5 year stretch in Texas, no early parole. Most folks in State prison down there did indeed get charged with B A, as it's known down there, for putting Horseradish sauce on brisket, the vast majority were visiting from Florida!

                                  After looking at this BBV soup several times I would like to take back an earlier statement concerning celery. My conclusion is that this soup needs no additions, or changes, of any kind.

                                    One more sauce recipe for that boiled brisket,
                                     
                                    Ketchup Horseradish Sauce
                                     
                                    1/2 cup horseradish
                                    1/2 cup Creole mustard
                                    1 cup ketchup 
                                    Mix together and chill before serving
                                     
                                    Now Ancient one, and Joe, you got me to wondering, can you even buy Creole mustard in your neck of the woods?  it's a grainy brown mustard, but may even have a little horseradish in it as well.
