Indeed we smoke ours before we deep fry and sauce, mild medium, hot, and yeow, I think I just licked the Sun.

    Grilled wings are the #1 thing I miss from Florida ... but, I digress.  Sorry.

      I like to deep fry them to make sure all the skin is crispy, we smoke them to about 90% done, finish in the fryer then sauce them. I got rid of my charbroiler, with the smoker, flat top, and charbroiler, going all at once it was eating me alive in propane costs. I'm not in a city limit so no Natural gas lines. I got a nice walk in you can shack up in, you'll need a REAL good sleeping bag though!

        I had hot Buffalo wings  for lunch today at my favorite go to dive. A big Bloke special, a pound of wings, and a 20 oz draft beer $7.99, but I would have to believe your smoked version would be a tasty treat. I am getting tired of plain deep fried and your smoke method would certainly kick them up a notch.

          a (Buffalo) wing expert here....those look mouthwateringly good.
           
          When I bake at home, I chuck 'em under the broiler to crisp and finish. So, a little crisp-up from there, sauce and boom, those look so goooooood!

                    No, Mellow, my supplier calls them jumbo wings, and indeed they are. Some wings you see in some places look like Sparrow wings!

                      I keep coming back and looking at those wing pictures.
                      They are some of the best looking wings, I have ever seen. Shake them in Buffalo wing sauce, serve with a cold draft beer and football fans will be lining up.

                        It's nothing personal, but I am unable to understand why anyone would even consider wanting to eat the wing of a dead bird. God knows I've tried because I always want to be fair about things. I've even eaten a wing at the Anchor Bar in Buffalo. Still, I can find no logical reason why sentient beings would consider the wing of a chicken to be a comestible.

                          Among the wings, most establishments serve what I call the small leg.  It is also very good and in fact, a lot of restaurants charge more for this morsel.
                           
                          Believe it or not, I have found that Hooters serve fresh and hot out of the fryer, chicken wings which are a combination of wings and little legs or whatever you call them.

                            Well, Mr. Hoffman, if you don't enjoy wings, I suppose that leaves more for the rest of us.  Win-win situation if you abstain.
                            When I was a child, I always got to eat the wings when my mother pan fried chicken.  She bought a whole chicken from a butcher's shop (not the supermarket) and cut it up herself --and she always cut the breast crosswise into two pieces -- a wishbone piece and a breast piece.  She would never have dreamed of just splitting the breast  down the middle at the breastbone.  The only place I know that still serves chicken cut up like that is Hollyhock Hill in Indianapolis.
                            My mom had grown up on a farm in Illinois and didn't consider supermarket chickens to be worth eating.  As I grew older, the butcher shop started carrying extra parts, and she'd buy four extra wings and fry them along with the rest of the chicken so I could have more to eat.  I can stilll devour a "pile" of wings at one sitting.
                            Nowadays, of course, packages of disjointed "wingettes" (either just the drumstick-type piece, or both parts, minus the tips) are commonplace in most supermarkets.  My mom always fried the wings whole. When I pan-fry them myself, I do prefer the disjointed ones to the whole wings.

                              Wings are ideal for broths.  They contain a lot of skin, meat, fat and collagen which result in flavor.  The bones add gelatin.
                               
                              Just remember to strain out the bones, skin and cartilage prior to serving.  You'll have the best broth ever and the naysayers will never know.

                                Great idea, Chewie.  There's a big catering outfit up the road that cranks up one of their big BBQ pit trailers in their parking lot every Friday afternoon and sells various smoked goodies "retail."  Sometimes I pick up a bag of wings to bring home.  The wife has been turbo-baking them to crisp them up a bit, but with your deep fryer hot and at hand, I'm sure that works better!

                                  Personally, I don't eat the skin of any chicken even though I realize that's where all the sauce and taste is.  I can't handle the fat content.

                                                      While I'm no professional chef, I do a LOT of bbq-ing and smoking, entering local contests even. I grill my wings on a Weber with hickory chips. When done, I baste and turn several times while basting with a concoction of my bbq sauce thinned with Frank's Hot Sauce until slightly carmelized.                                                           Lots of places around here do "char-grilled" wings now, and to be honest, most places over-char and over-salt them, so they're all dried out. The best way for me is smoked then deep fried, and finished with a good'n spicy bbq sauce. The best of all worlds, IMHO.
