I've been making Claremont Salad (very similar to Health Salad) for several years now since I learned about this deli side dish right here on Roadfood. In fact, I have plans to make up a bowl of it this weekend. Not only do I like the taste of the salad, but I love that I can keep a bowl in the fridge for several days, which is more than I can say for tossed salads.
Claremont Salad
3/4 small head green cabbage sliced into thin shred
1 small onion, thinly sliced
1 medium carrot, peeled, thin sliced
1 small green bell pepper, small chopped
1 rib celery, thinly sliced
1 cucumber, seeded and sliced thin
1 t. salt
1 TB water
2 TB oil
3 TB vinegar
2 TB sugar
Toss the vegetables together; mix dressing ingredients in a jar. Shake well. Pour over vegetables and stir well. Let set at room temp for 2 hours, then chill. Will keep several days in the fridge.
