    This is almost a must at our meals in the summertime also. I remember it from when I was a child and I still continue the tradition now

        Now that spring is here and summer is on the way, I like to think of all the fresh sides we can eat:

        Creamed Corn
        Fried Okra
        Squash-cooked any way you want
        Sliced Tomatos, cucumbers and Vidalia onions
        New Potatoes
        Wilted Leaf Lettuce and Spring Onions
        Radishes
        Strawberries and Peaches

          Sounds wierd I know but it's irresistable. Someone made this dish this past Christmas and I commented she was nuts. I was embarrassed when I couldn't stop eating it. Ended up bringing half the pan home and ate it cold out of the fridge. Goodness Gracious!

                    I believe that sweet potato souffle with brown sugar and pecans on top is the best side dish for Thanksgiving! At least for today.

                        Baby carrots sauteed in olive oil and tarragon
                        Beets
                        Sauteed squash with a bit of brown sugar
                        Stewed tomatoes that aren't overly sweet
                        Spaetzle with brown sauce
                        Creamy cole slaw that's not overly sweet
                        Fresh sliced tomatoes from the garden
                        Mixed greens side salad with oil and vinegar
                        For BBQs, a grilled skewer of cherry tomatos, green peppers slices, mushrooms and onion slices
                        Green bean almondine
                        Beets
                        Fried plantains (when and where available)
                        Pea salad
                        Fried okra
                        A big baked yam with butter
                        Crispy onions rings without too much batter

                                                          I think for me the better answer to the question is what side don't I like? In New York there is not usually a choice of sides, as some have previously mentioned, but I have been tempted in restaurants to order a less desirable main course because the accompanying sides sounded so good. Some of my favorites include perfectly tender-crisp steamed/sauteed vegetables, especially zucchini and squash with maybe just a little butter, really good fries, risottos and pilafs, mushrooms in any form, red cabbage, home fries, mashed potatoes, sweet potatoes...you name it. I'm a vegetable fiend, so cook it and it's good to me! (I'm not picky.)

                                                          I don't really care for coleslaw, okra, or grits.

                                                          I'm originally from western NY state. I moved to get out of the cold and love the south and all things southern. I've been here long enough now that when I go back to visit, the food there seems boring, non-descript, edible. I mean, it's decent fare, meat and potatoes type stuff, and some prefer it. The biggest shock to me when I first visited the south was sugar in iced tea! As for northern sides, I'd stick to fries, onion rings, etc. You'll shrivel up to nothing in the south if you don't eat coleslaw, okra or grits!!!! Unless of course, you like cornbread in any shape or form!
