I have a new favorite side. It's Pommes Darphin. The trouble is, I can only get it with roast duck.



OMG that looks insanely good.  Mrs. Metro now has a new "assignment"!

    They are Hash Browns! I looked at several recipes and not one mentioned duck (fat).

      As with most Cuisine Francaise their preparation is a bit more "involved" than hash browns as is their proper presentation.
       
      The first time I went to Paris i couldn't stop thinking "Holy Sh*t!" with every first few fork-fulls.

        My favorite sides are those that use fresh vegetables. Spring-creamed garden peas or creamed new potatoes & garden peas; wilted lettuce.  Summer- fresh green beans(cooked long & slow the southern way) with fresh tomatoes & raw onion: cucumbers & onions in cider/sugar dressing: fresh corn on the cob or creamed corn.

          I LOVE cheese, in fact, I think I may have too much over the course of growing-up!
           
          With that said, gotta' have the mac n' cheese ! I've seen people cook it with crock pots, anyone know how that works? o_O
