An All Macaroni Restaurant?

Do you think a restaurant can survive serving only macaroni and cheese?
 
I know that I would try it at least once, but I like my macaroni and cheese fairly simple.  Mix something else in to it (even lobster) and instead of it being better, the taste of both good things is diminished.

They could make it.
They're doing Breakfast, Sandwiches, Salads & Desserts too.
It's close to the Univ of AZ so college kids will go for it. An alternative to their Ramen Noodles! Also serving Beer & Wine.
Nothing says gourmet dining to a college kid like a bowl of Mac & Cheese and a cold Bud!

Looks like they are ripping off borrowing the concept of Noodles & Co., a WI based chain that features a variety of pastas.  Besides M&C, Noodles features Mediterranean & Asian style offerings. Their Stroganoff & Buttered Noodles are also wonderful.
 
The Fix will definitely do well if they are anything like Noodles.  I looked into franchising Noodles in the PHX area, but came up short in resources.

I told my brother to go to the rice pudding shop when he was there.  That idea intrigues me.
 
Wish I had a ton of money.

I haven't seen any Sonoran dogs yet, but I have found Beef on Weck, Indian Pudding, Jucy Lucys, Muffalettas, Kentucky Hot Browns, pimento cheese sandwiches, bbq spaghetti, burnt ends, green chile cheeseburgers, etc in various locations of the 5 boroughs.

Crif Dogs serves an adapted version.The Chihuahua Dog. Bacon avocado sour cream. No Bolillo roll...or beans...or mayo etc.

Cabrito (now closed) sold "Border Dogs" @ $8 . That's part of the reason why it does not work in NYC....as far as hot dogs are concerned.

I'm utterly shocked you haven't found any Sonoran dogs yet. It wouldn't surprise me if you head up to Spanish Harlem during Cinco De Mayo, that you would find one.
 
Out of your list, finding a Juicy Lucy in the NYC area doesn't surprise me. Remember, stuffed cheeseburgers weren't invented in the Twin Cities, they've been around everywhere for decades,however the term "juicy lucy" was coined in the Twin Cities.
