californyguy AM STAYINGWITH FREIND WHO JUST HAD SURGERY-WILLCOOK SOME CHICKEN BREASTS NUGGETS TOMOOROW,BUT CANNOT USE FAT,FRESH VEGIES OR SPICES...ONLY CANNED VEGGIES,PAM...ANYRECIPE IDEAS APPRECIATED I can understand 'bland' food, but I don't follow the ban on 'fresh vegies' with exception of raw vegies & salads (roughage & gas). If these are cooked until soft, I feel would be better than 'canned veggies'. No nitrates and less or no sodium than the canned stuff.

You can bake chicken nuggets to avoid the fat in frying. Just prep the baking sheet with a cooking spray.

Boil the Chicken in Chicken broth, stir in LeSeur peas drained and some other canned veggies of your choice, canned new potatoes would be good and add a pinch of good Sherry , if allowed. A thin but tasty Chicken Pot Pie!

Dice the chicken nuggets and add to canned mixed veggies diluted with a can of water. Simmer until the diced nuggets are tender, adding more water as needed. This way you are avoiding any added fat that might be in the chicken broth, and mixed veggies usually contain diced potatoes, carrots, peas, and green beans for a nice variety. (If they don't, you could add 8 oz. cans of various veggies to make a nice mix.) I would think the sherry would be a no-no.

The alcohol would boil off, only flavor left.

Foodbme Make Chicken Noodle Soup with low fat chicken broth. Good ... I get a roasted chicken from the grocery deli ($4.90 on special). Pull the meat off for chicken salad, sandwich, and other use. Then put the bones in a slow cooker along with onion, celery, and bit garlic to make broth and cook the remaining meat off the bones. Add bit of green onion & napa cabbage for an oriental style chicken soup. Serve over ramen or small egg noodles; or straight up.
