Smoked Beef Tongue

Anybody here like Beef Tongue, anybody cooked one? I'm thinking of buying one and trying it in my smoker. Any hints? Would you try a smoked tongue sandwich at a BBQ joint? I've never tried it, but I'm going to!

I grew up eating (occasionally) cold smoked calf's tongue; never tried it from the smoker. I like it fine. It has a flavor in the same family as smoked hams; it has a different texture. Bart

Wrap it in bacon, I think your cholesterol level is down to 1000 with the lack of bacon on your last club sandwich..................

I have smoke/grilled beef tongue a couple of years ago. The price was about $1 to $1.20 per lb then; now it's $3.99 per lb. I can buy brisket at $2.50 per lb. Anyway, clean the tongue very well and removed the outer skin. I smoke it for about 2 hrs; then cook cooked until tender. ... It seemed to have a slightly strong flavor. I think the strong flavor might vary with the tongue. .... I served it at a Thanksgiving meal and the inlaws eat it all. I didn't tell them it was anything other than beef.

I haven't had tongue in about 30 years, but I sure did love it when I was a kid. No self-respecting deli would leave tongue off a smoked meat platter.
