Here's a great sandwich with cole slaw ... from
Primanti Bros. in Pittsburg.
This famous sandwich is essentially grilled meat, a vinegar-based cole slaw, tomato slices, and French fries between two pieces of Italian bread. And Pimanti Bros. recieved an America's Classics award from the James Beard Foundation in 2007 ... so ya don't gotta be a yinzer to enjoy one ...

There are other Primanti Bros sandwich recipes out there ... here is one ...
2 slices Italian bread
5-6 slices ham, thin (personally I would use Hot Capicola ... absolutely)
2 slices provolone cheese
1/4 cup coleslaw
2 slices tomatoes
1 cup French fries, still warm
mayonnaise
Spread mayonnaise on bread.
Layer your choice of the above ingredients.
Serve on wax paper for authenticity.
Here's a Cole Slaw recipe that is said to be close to Primanti's (this particular recipe is one called "Amish cole slaw"). For use on the sandwich ...
1 medium head cabbage, cored and shredded
1 medium onion, finely chopped
1 cup white sugar
1 cup vinegar
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon white sugar
1 teaspoon prepared mustard
3/4 cup vegetable oil
DIRECTIONS
In a large bowl, toss together the cabbage, onion, and 1 cup sugar. In a small saucepan, combine the vinegar, salt, celery seed, 1 teaspoon white sugar, mustard and oil. Bring to a boil, and cook for 3 minutes. Cool completely, then pour over cabbage mixture, and toss to coat. Refrigerate overnight for best flavor.
