As a kid I remember going to a place to buy fish with my dad. He never bought scallops there, because "everyone knew" that they punched ""scallops" out of shark fins. I don't know if it was even true. Years later, a friend in the scallop biz (real scallops) told me that shark fins are worth more than scallops.
 
Flash forward to today........they were talking on a local radio station about a restaurant that got caught using rings cut from the back end of a pig in place of calamari. I wish that I remembered the name of the place.
 
Not seafood, but a local strip club has been punished for serving cheap booze out of expensive bottles.
 
You need to trust the places that you go.

    I've heard that faux scallops were (are?) cut from rays.

      It used to that bay scallops were more expensive than sea scallops.
      Now it is just the apposite

        Real bay scallops are still much more expensive than sea scallops. In Florida, I've seen coquina sold as bay scallops - and at a quite reasonable price. They all have their uses and they're all good to eat.
        Anyone who has ever seen or eaten a real scallop could never be fooled by something punched out of a ray or shark. However, it wouldn't surprise me that there are some people out there who would attempt to do just that.

          An even more henious crime to the delectible scallop is soaking them in STPP, sodium tripolyphosphate which is approved by the FDA!!

              I heard that the pig story might be an urban legend but have no confirmation either way

                Which put me in the hospital after eating a big plate of them in a Japanese restaurant a few years ago.

                Wow.  I never thought of STPP causing an allergic reaction.  I was always appalled at the thoughts of "soaker" scallops vs. "dry" scallops.  The main reason, of course, that they do this is to increase the weight of the scallop, therefore the consumer is paying for water weight.  Upon cooking, the water oozes out and you can never, ever get a nice sear on the scallop.

                  America's Test Kitchen has a workaround for "wet" scallops; obviously the scallops won't be as good as "dry" ones but it's better than nothing.

                    They told me I had some chemical imbalances that got set off. As soon as I told them I had scallops they said "yup" that did it.

                      Personally I would take nothing rather than eat "soakers".
