 Bacon and Egg Salad

Bacon and Egg Salad

1 dozen boiled & peeled eggs

1 pound bacon; crisply fried & broken into ½ inch pieces

Durkee’s Famous Sauce

Your favorite mayo

Horseradish Sauce

Freshly ground black pepper

 

Press eggs through a ½ inch mesh (I use an old fashioned cake batter mixer) into a suitable sized mixing bowl.
Add half a mixture of the Durkee’s sauce, and your mixture of at most ¼ mayo and ¼ horseradish sauce.  (The actual ratio of these ingredients can be altered to your individual taste).
Mix completely but keep the mixture from becoming too smooth.
Taste, add black pepper to taste, and mix lightly again.
Refrigerate at least 8 hours to properly marinate.
 
Enjoy in your favorite sandwich bread or on top of your choice of crackers.  For added zest, top with a small squirt of Sriracha sauce.

            Kind of a sweet mayo sauce-am I right, people? That sounds good for me, I love eggs. Bob hates eggs, and kinda sweet mayo,( he loves Duke's)so not an option for him. But i would do it for myself.

                      Does this do a quick slicing of the eggs into 1/2 inch chunks? When I first read it, I thought smaller sized grid and thought it would produce a creamy egg mush, but then reread it and saw 1/2 inch. We like our egg salads to be chunky, not creamy...Other than that, this sounds like it tastes really great.
                       
                      AND before any jokers mention it, yes we know we can get chunkier egg salad if we leave in the shells... NO THANKS, we don't need our daily dose of calcium that way...Stan...

                        This sounds really good! Love Durkee's in crab cakes or crab casserole too! I often have Durkee's on hand, but am out of it at the moment. Will try your bacon and egg salad recipe soon. Egg salad is also good on toast for breakfast!

                                      Similar to one that I make except no horseradish sauce and I
                                      add a very small amount of grated onion and celery, some seasoned salt and a very small amount of mustard. Mayo is Dukes.

                                            Bought some Durkees today at local market for $2.89. Don't know if that is the same as Kroger, guess Kroger sells it. Publix is 30 minutes away. Will spread it and Dukes Mayo on bread tomorrow, add ham and swiss cheese and have my lunch sammich.

                                                Units: US | Metric


                                                  1/2 cup cold water 4 tablespoons cornstarch 1/2 cup balsamic vinegar, plus 2 tablespoons balsamic vinegar 1 tablespoon salt, plus 2 teaspoons salt 1/2 cup sugar 1 egg 4 tablespoons prepared mustard 4 tablespoons unsalted butter

                                                Directions:

                                                1. 1
                                                  Put all ingredients, except for the butter, into your blender.
                                                2. 2
                                                  Blend on high speed about 2 minutes or until mixture is smooth.
                                                3. 3
                                                  Pour into top pan of a double boiler.
                                                4. 4
                                                  Cook over gently boiling water.
                                                5. 5
                                                  As sauce begins to heat, add butter, stirring often to incorporate.
                                                6. 6
                                                  Cook for 12-15 minutes (stirring often) or until sauce becomes thick and smooth.
                                                7. 7
                                                  Remove from heat and allow to cool.
                                                8. 8
                                                  Cooled sauce may be run thru blender, again, on high speed for about a minute till smooth.

                                                  Refrigerate sauce in covered container for several hours before using.
                                                10. 10

                                                    Attn:  lleechef, I spoke to another Roadfooder last week, I can't divulge his name, Hint " It Rhymes with bacon" anyway, we talked about Michael being a bit to darn nice. We both decided we wanted the OLD Michael back. The guy who use to eat hot dogs at Friday night football games and spill mustard all over his jacket. We both knew Michael would clean up well, but, we think you took, it a bit to far. I saw a picture of you and Michael on this site, I think I saw Michael with a smile on his face, What the heck is that about, is he being feed to well, was the smile really gas...We need to know, What did you do with him, the truth will come out sooner or later.
