Homemade Beef Sausage

I made some sausage from some short ribs. Gnd mixture with spices and liquid a small patty fried up to check taste and spices. Really good taste links I got 12 links out of the 3 lbs of meat grilled sausage ...............tasted great

Smith Knoxville, TN Paul, I would love to make this an open sausage chat for everyone to post their sausage and hot dog making ideas. Maybe change the name of the post to "open sausage chat" we have members from around the USA with some great ideas, I'm sure we would both like to see how they do it. Next on my list is Italian sausage and Brats...........What do you think ????? Now for the spices........I used 4 cloves of garlic minced, 1 tblsp Smoked Paprika, 1/4 tsp Cayenne pepper, 1 1/2 tblsp Kosher salt, 1 tblsp grd mustard, 1 tsp gnd coriander, 1/2 tsp blk pepper........about 1 1/4 to 1 1/2 cups of ice cold water.................the emulsion is like making a hot dog. I used water because I wanted to see how the spices tasted in the sausage. Tell Roz, the test patty I made would have been great as a beef country sausage, the aroma was fantastic, the taste was great. I will make more mix next time to make some country sausage to form and freeze, it's well worth it if she only uses beef. The short ribs also worked out well, I just cut them off the bone, used all the meat and fat. These short ribs are coming off my blk angus steer that was hung for 26 days, even the meat is nicely marbled. I will use the bones for a homemade beef stock.................

Did you know he was broken when you married him??????.......I heard there is a good hospital in Ohio, it offers Hip replacement and anger management classes at the same time, you could kill two birds with one stone. In this case it more like a bolder.............Bill

That'll last me a lifetime. If I had to eat one more of those things my lifetime wouldn't last till the end of the hotdog.

Or, do you just twist them hoping they won't unwind? Are your dishes Fiesta? Hi Mar, The cobolt blue plate were from Pier 1, I got them years ago. We use to have a Southwester theme in one of our accounts. I use to have three different sets of plates for Corp lunches and brunches. Our home is Mexican Southwest theme, so it works in our home also. When you start making the sausage you tie a knot in the casing, if everything goes well with no breaks, you tie a knot at the end. You then pinch and twist the length of sausage you like. If you twist about 4 or 5 times it will stay. I then prick the sausage, let the sausage bloom, this sets up the sausage, at this point I can cut and they stay perfect. I am going to apple smoke a few of these this afternoon. I figure on smoking for about 20 minutes to a half hr then grill until down with a nice char...............will see .........catch ya later gator.......................Bill

Chewy, they are calling it hip surgery, between us I have a strange feeling Lisa is having him checked out between the ears.
