 Coconut Oil

Anyone cooking with it?
 
We've been using it as butter on cinnamon, raisin bagels and it's not bad.
 
I hear it might even be good for us or at least opposed to using butter.
 
We've yet to use it in any other way.

        Oh... We haven't had chapped lips since eating these bagels so there is a benefit.

            The smoke point of Coconut oil is only 350 degrees so it could only be used for moderate temp frying. I bet shrimp & other seafood fried in coconut oil would be pretty good!

              It was suggested that I feed it to my dog for a skin condition. Her nose and nostrils get real dry and crack, she gets about two tablespoons twice a day on her food.
              The problem is clearing up nicely.

                    I have been drinking coconut water for a while. Pretty tasty and refreshing. It's supposed to be better for rehydration than anything.

                            My flavors were:
                             
                            Browned Butter and Sage
                             
                            Punjabi Spice  (Like a Somosa)
                             
                            Sweet Marrakesh  (Moroccan spices with orange zest)
                             
                            and of course...  Lime in 'Da Coconut  (Figured they'd Pay for the theme song)

                                Its high in saturated fat, so consult with your doctor before deep frying snickers bars in it.

                                  I have replaced all of my cooking oils with coconut oil. It took me a few days to get used to the flavour, but it just has such a nice texture.
                                   
                                  Apparently it is even a fat burner too.

                                      Far superior to any other oil for popping popcorn.  I used to prefer peanut oil, but now even that tastes like styrofoam vs. using coconut oil.  The difference at first may seem subtle until you do a side-by-side comparison.
                                       
                                      Note that there are different grades.  The virgin coconut oils have superior taste vs. refined coconut oils plus they tend to have lower softening points (as low as 76F) which tends to be better for you although they can liquify in warmer climates.  
                                       
                                      Although they are high in saturated fats, studies have indicated they may cause a lift in desirable HDLs. Furthermore, the amount one might use for popcorn is a relatively small amount.  Coconut oil tends to have about twice the overall saturated fat of bacon, but none of the cholesterol.  Its saturated fat amount in a batch of popcorn is probably like eating a slice of bacon, but who can eat just one slice?
