Aluminum pans & racks - prevent metal shavings? Fri, 03/22/13 1:53 PM (permalink)
I've been a long-time lurker of the forums and have used some great ideas to help with my own food truck build up here in Alaska but this is my first post.  I did some searching around and couldn't find anything specific so decided to start a new thread.  Sorry if it's been answered 100 times or if this post is in the wrong place!

We use aluminum pan racks (and aluminum pans) and have begun to notice that we're beginning to see metal shavings falling from the pans.  It's not cost-effective to go all stainless steel (shipping to Alaska is crazy!) so I was hoping that some of you out there have experiencce with this and could offer some advice.

Thanks!

just standard heavy duty sheet pans in an upright pan rack.

      like this:

not disposable.  we specialize in cupcakes so after we make them we place a few dozen on each pan and use them for storage until they're sold so on a daily basis these pans are being put in the rack and taken out a lot.

Sounds like you just need a division along the edges between the rack and the pan. A piece of tape should do it for the short term...
