Hi all,
I finally reached the 30 post mark so I can post pics 
I'm actually posting this so we can all see how different states have different rules regarding food trucks, here in HI there are so many roach coaches that you can actually count with one hand the number of professionally built trucks.
Well my story goes like this:
I bought this IH van from a friend of mine that was moving to Seattle, I got it for cheap but I knew that I had to do some "minor" repairs, well for the most part it's turning into a restoration project/food truck build. I think I'm about done with the resto, so from now on it's mostly the food truck build.
anyways, I'll post some past pictures, right now I'm laying the backsplash and will continue to update as time permits.

    Brakes weren't working so I figure I check the master cylinder to see what's going on, checked under hood and couldn't find it, followed the brake lines and they lead me to this

    seals were blown so I was lucky to find a replacement online, after installing, I noticed a leak by the inside of the front tires, checked the lines and they were OK, took off the tire and saw that the wheel cylinders were leaking, come to find out they were shucked an filled with corrosion

    I found out after I drove the van to my house  Lucky I didn't get into an accident.

      headlights weren't working so I checked and lo and behold, spaghetti wiring all over the place, took off dash and this is what I found

      not too bad considering is a 40something Yr old vehicle

          cleaned that crap right out:

          Stripped the ceiling too, I was itchy from the insulation I think I could've gotten mesothelioma from the freaking asbestos up in there LOL

              stripped the dash, removed all the wires and installed a kit from rebel wire. painted the cabin and sanded and painted dash and gauges panel

               
              So after installing the new wiring kit, changing the oil, shocks fuel pump and exhaust, this beast is ready for the road and to be built!

                So the van didn't have any studs or support beams so thanks to some of the members here I got an idea and after thinking about it I riveted 4 2X1 C channel to the side wall, they are very sturdy, I was tugging on them and didn't feel lose or weak.

                  yesterday I degreased the floor and installed the insulation and plywood, I had some leftover stains from spilling brake fluid, but overall the floor was gunk free


                  I was only able to install 1/4" plywood because if I went with thicker one it would've "spilled" over the door, like this I'll be able to be flush with it.
                  This is the problem spot,
                   

                   
                  the solution would be to rivet some angle aluminium to the door to make it all fall into place

                    BTW, I spoke to my assigned inspector and they really don't care if I have a hood or not, as long as I have a 3 comp sink and enough water and big enough capacity in the gray tank I'm good.
                    That hood I got from a demolished restaurant and got it for $0 but I'll only use it until I have $$ for a new shiny SS one.
                    Also our code just requires that all openings have a screen to stop flies from coming in during service ours so my window will be a simple screen, I would love to have everything nice and shiny but since the van is rather old, I'll just save up to get a newer one then go all out.
                     
                    On the TODO list is installing the backsplash, cutting the table to make it into an equipment stand installing equipment, lining the other wall and roof with FRP and installing plumbing

                      Maybe too late now, but I'd recommend using closed end pop rivets, and to back this up an adhesive rubber sealing button, especially for any roof rivets.  The buttons go over the hole on the outside you then just push the rivet thru to button and it gets compressed down, that with the closed end rivets gives you a waterproof seal.

                            I was thinking of dipping the rivets on marine sealant just like we do with kayaks here but got too excited and forgot LOL, I'll do it for the rest of the walls, Also I still need to paint the exterior so I'm hoping that the paint will form some kind of seal, we'll see

                              I was thinking about that, I think rustoleum will do the trick, it will also add a smoother surface that will be easier to clean no?

                                so...change of plans, I got an excellent deal on a 2004 Utilimaster with a ford  engine, hardly any miles (was government vehicle) so I'm dumping the IH and I should have the new one up in a month.

                                roll up rear, so I will be taking it off and sealing the back.

                                        I had some time this weekend so I started working on "Blue Hawaii" I will need to remove the roll up door and also debating on leaving the bulk head bare or to glue frp on them.
                                        I found a 3 comp sink on CL I started with this: 

                                        and ended up with this after some elbow grease.

                                        I got the sink for $60 but it's broken where the drainboard meets the last sink but I'm gonna ask my friend to weld it for me, he's also gonna make the frame for the rear and the door.
                                        I also started putting up the FRP on the door wells and removing the insulation on where the window will be.

                                            Do you have your layout and equipment list figured out? I see your sink is on the passenger side. If you are going to use LP heater and your other LP equipment and lines are on the other side of the truck, you may want to put your sink on that side as well.

                                                OK, lucky you on having a laid back health department.
                                                 
                                                I have not started to cook, my county is really strict and I am still trying to find a suitable commissary w/o paying an arm and a leg each month. However the whether is getting warmer so I am picking up the pace and should have a place soon. I have a festival coming up this month but I was not able to rent a space big enough for the truck so I have to work out of a 10x10 booth, I really wanted to showcase the truck there but I guess it is a good thing as I am still wrapping the truck due to all the rain lately.

                                                      so finally got some free time and removed the roll up and built the frame, I still need to get it attached to the frame, but that should be easy, we also built the frame for the door and got some stainless on the wall.

                                                        3 months after and I'm done building, haven't had time to post pictures, had inspection and need to correct a couple of things by Friday, nothing major, will post pics soon.

                                                          Bradda, I take two Hot Malasada Kalua pig sliders.........ok I wait until the grand opening...............Anyway.........The HD in Honolulu was one of the toughest I have ever gone through. It used to take them 3 hrs to do the inspection in a few Restaurants in Ala Moana Ctr..............of course, I was Haole, that added another hour on the inspection..............Good luck with the new business, where are you setting up shop ?????? pnwc.......Blue Hawaii, I can see the ocean from your truck...........good name............
