What's Really In My Hot Dog??? Fri, 07/26/13 8:17 PM (permalink)
So many of us around here love our hot dogs..and even debate the best.....Weknow a Thumann's is good quality as are others......but those others.....that $.99 cent a pound dog??? What are we eating. If you did NOT know, check this out:
http://xfinity.comcast.ne...ot-dog/?cid=hero_media
I know there was a reason I ate the quality dogs!! Has any one tried those organic dogs at Trader Joe's mentioned in the article???
What will they tell us next? Bacon isn't healthy? Beer causes big bellies??

Although I love Thumann's hot dogs, these are the dogs I buy the most. They are much lower in sodium and are made without nitrates.
I especially like the 100% organic all beef. When I'm ready to buy more, I simply go to their website and print out a .75 coupon. Being on their mailing list also gets me $1.00 coupons.

Yes,Twinwillow,I see that Applegate is singled out for quality in an organic dog...never found them around here, but I'll look....Still love my Schickhaus and lately I've been buying the Windmill packaged dogs. Windmill restaurants are spreading around Jersey. They're a quality dog, but I forget who makes them for Windmill.

Lee, go to Applegate's website and see if there are any stores near your zip code that sell the products you're interested in.

Many, if not most people really haven't been exposed to a good hot dog. Those made by European butcher shops and pork stores are .made from whole cuts of quality beef and pork; nothing vacuumed off a bone. Makes a big difference.

I won't tell you where that big bucket of silverskin/gristle/trim from my veal purveyor was headed.

I'll eat all that junk. I ate much worse, especially several evolutions ago when I was a hyena. But when and if those provision powers that be venture to put Soylent Green in my beloved encased meats, well then, that's where I'm gonna draw the line,  yessiree.

You could set your watch that every Wednesday aboard any given Navy vessel lunch would be sliders and rollers (burgers and hot dogs). The rollers were some of the most god-awful hot dogs known to man and the navy saw fit to serve them to us. Which is why to this very day I do not eat hot dogs.

John, are there still butcher shops in NJ that make their own dogs ?? I would think these would be better than most on the mkt.........There is a place named Otto's sausage kitchen in Portland Oregon, they make all their own Hot Dogs and Sausage. They have a BBQ grill out front and grill the dogs and sausage. Nothing like getting a nice char dog off the grill from a quality sausage maker.
I made some hot dogs out of Short rib meat, I used this because of the nice amount of fat. In order to get the Hot Dog blend, it needs ice water to get an emulsion. You can add the spices you like, red pepper flakes for heat, Jalapeno juice or fine chopped fine peppers for flavor, you can also use fruit juice, beer, whatever. The spices and flavors are unlimited, no preservatives, just a full flavored Hot Dog. I do this because we raise our own pigs and beef and I'm always looking for new ways to use the pork and beef.

Here are a few pics from Otto's when I was there in December.
They have a huge selection of encased and smoked meats.

I don't know who originally said it, but, when you consider that hot dogs are essentially sausages, it aptly applies. "There are two things you shouldn't see made: laws and sausage."
