Bacon wrapped dogs - howto Sun, 09/15/13 9:54 PM (permalink)
Getting out of the factory to start a cart business.  A few carts in my area
but they sell "plain" dogs.  I would like to do the bacon wrapped sausages
to be different.  Question is..... do dogs have to be cooked on a griddle
and not a grated bbq due to grease dripping down and causing flare ups?
I have a nice cart just come up for sale near me but it is a bbq grate style.
Any other helpful info on doing dogs this way would be much appreciated.
Thanks

hmm, put the bacon in a shallow pan on the bbq.
maybe a steam pan grate on the bottom so your bacon wont be sitting in its own grease, be sure to ask your area HD if you can cook on the cart or you need everything precooked. cheapest bacon I have seen so far is the hormel black label in the wholesale clubs and you can get it raw or cooked.

      Another method:
Pre-cook the bacon in strips and put a slice of bacon in the roll alongside the hot dog.
You can keep the bacon warm in a steam tray. Less Fuss, less time consuming when you get busy. Easier to handle.

THis is one way, they also make a small 12" side mount gas grill that would mount on the cart. Let be know if you want into on that one, I'll look it up. From what I remember the cost is reasonable.............good luck, welcome to Roadfood..........pnwc

Thankyou for your help and your welcoming.  I believe I have solved my problem.  After surfing on the net I found "Little Griddle."  They are a stainless steel grill that is place on the BBQ.  They look good.  I will find out how well they work.  Thanks again!

I know this sounds weird, but, go to google and search "roadfood little griddle (or sizzle-q)". You will find a few posts about the grills. They are pretty useful for cheap. And light. Probably could type in "bacon dogs" or "sonoran dogs" too.

Thank you Tristan.  I took your advice and found some good info - it looks as if
these are pretty good additions to a BBQ grill.  I will have to order one as I bought my "Hummer" cart tonight!  Now I'm committed.  I have a location secured and will start
my cooking career May 2014!  Lots of time to experiment with the cart and work out
              my menu etc.
Thanks again people - great site
