Steam table

I grill all of my dogs and sausages on my cart but the temp. is droping here so I would like to steam my hot dog rolls. Can any of you other venders tell me what temp you keep your steam table at and how long will a roll keep on it. I know for dogs I would think it should be around 160(this is just a guess). I have a third size steam table on my cart but I think the burner is just too big because even at low it gets around 200 degrees or more. I know there are many variables on this such as how much product you have in and so on but can anyone give me some ideas or hints on how to deal with this?

Chicago are you saying you cover the steam tray with the towel and then sit the rolls on top of that still in the package? BTW thanks for taking the time to help me out here!

I have not moved yet. The company I work for is trying to keep me here but I dont think it is going to work. I am working on all of the details for Fairfield so keep your fingers crossed, I know I am.
