Help! Cheese

Hi gang, I having trouble with my cheese, what cheese should I use?
How do I serve it?
I am now sprinkling grated cheese in the bed then on top. What a mess. I tried Kraft cheese and floated the container in a frothing cup on the grill to keep it hot. What a mess. It some times burnt the cheese. What do other carts do?

Let me get this straight.......you're sprinkling cheese IN THE BED and on top?? YIKES!

Many Chicago hot dog stands use Merkt's cheddar cheese. Heat the cheese in a steamer and spread it over the dog with a stick(similar to a paint stirring stick). Dress the dog, not the bun when using a steamed bun. You can apply the cheese directly to a bun that hasn't been steamed.
