Help! Cheese

Hi gang, I having trouble with my cheese, what cheese should I use? How do I serve it? I am now sprinkling grated cheese in the bed then on top. What a mess. I tried Kraft cheese and floated the container in a frothing cup on the grill to keep it hot. What a mess. It some times burnt the cheese. What do other carts do? Tnx Cowboy Bob

Many Chicago hot dog stands use Merkt's cheddar cheese. Heat the cheese in a steamer and spread it over the dog with a stick(similar to a paint stirring stick). Dress the dog, not the bun when using a steamed bun. You can apply the cheese directly to a bun that hasn't been steamed.
