Blue cheese dressing

I'm a big fan of blue cheese dressing, especially when a restaurant makes it themselves. The genuine roqufort product, made using cheese from French sheep milk is seldom served, but the generic blue cheese product can be excellent. What is your favorite? Do you pay extra for blue cheese dressing in your area?
