burnt cheese on cheeseburgers on purpose

When I was working as lunch chef, a friend that I was cooking on the line (making bacon cheeseburgers) told me that he went to a restaurant in Connecticut as a kid that's SPECIALTY was crispy browned burned cheese on top of the burgers. To show me what he meant, he threw pieces of the cheese that we were making regular cheeseburgers with (cheddar)on the "flat top griddle" and basically just fried them until they were brown and crisp, and if you didn't touch them, until they were nice and dark, they would easily come off the griddle, no mess. It was like the way grilled cheese tastes when some cheese oozes out and gets grilled... or sometimes pizza or lazagna cheese that is " burnt". It was SO YUM. Have you ever had a burger like that???

Nope, but I think I just might have one this Friday after the football game. I like my pizza "well done" for this reason. Something about it just looks right and it tastes a whole lot better. Thanks for the idea.
