Roast turkey is the classic and most common, and it can be very good. Roast beef is pretty much hit or miss, IMO. The best homemade version is always with leftover roast pork loin, mashed potatoes, white bread or biscuits, lots of gravy, and a side of chunky applesauce. Now that's home cookin!

Had a great hot meatloaf sandwich at a place called Clarke's near Navy Pier in Chicago a few weeks ago--no gravy, just BBQ sauce, plenty of mashed potatoes, excellent.

I have to vote for the Hot Brown with turkey, bacon strips, sliced tomatoes, and smothered in creamy cheese sauce. Yah! It will stick to your ribs (and your arteries) in winter! Andrea

Nothing can beat my mom's hamburger "gumbo" open faced sandwiches. Take a can of Campbell's chicken gumbo soup and cook it with 2 lbs of ground beef. Serve over white bread and mashed potatoes. Sounds disturbing, but tastes great.

HI EVERYONE........ALL SOUND DELICIOUS. I Would like to add Welsh Rarebit to the list. White toast, cheddar cheese sauce, bacon and juicy beefsteak tomatoes.

So had some left overs from Thanksgiving sealed away with my foodsaver. Today was a gloomy day, perfect for an open face sandwich.

My personal favorite Hot Brown is at Darfon's, an independent restaurant, along the lines of O'Charley's, Cheddar's, etc. It's about a mile from the Nashville airport.

My mother always served her creamed chipped beef over a baked potato with peas.
